Haven't had this in yrs since my Brooklyn days, decided to make it and I'm happy I did. It came out amazing!! I didn't get a chance to get scallions and thyme but that's ok.

this man's recipes are absolutely divine I've cooked a lot of these and have served them to family and friends and allways get nothing but good comments and compliments on the dishes that they have eaten. I can't eat plain rice anymore . what can I say but the man can cook . the home made bbq sause is Devine it keeps in the fridge for a month and is so nice as a marinade for chicken .thanks you so much bro

This soup was a hit with my family! My mother even said I can make it anytime. Thanks Chris! A tip I learned for Gluten free spinner dumplings. I used Pillsbury Gluten free flour and the dumplings came out perfect! I used a 1/2 cup of water added little by little. As the flour was kneeled and mixed with water it begins to firm and becomes easier to make spinners.

When I have left over stewed red beans or any stewed beans or peas and I am lazy, I usually throw in some carrots, potatoes or whatever I have to make a quick soup without pigtails or dumplings. Thanks for the video.

This is a nice interchangeable recipe! I thought the same thing...I'm not eating a pig tail...EVER!! But, I know I can make it vegetarian...the addition of thyme, allspice berries I will definitely incorporate in my bean cooking!

"Stewed" peas or beans is the method used for cooking. So you can have stewed black eyed beans/peas, stewed pigeon peas, stewed red beans, etc.

Suggestion to anyone who wish to try this way of making this soup, add cubed pumpkin or squash for a richer texture, also, if u cant get your hands on pigstail (i sure as hell cant) u can also use that beef thing he talked about. I use both beef and chicken in mines

I added OKRA and more onions than the recipe called for. I also added Karella and celery.. Normally bitter but not in my soup. The coconut milk must have hidden it. Thumbs up Chris.

Delrose Brady you have to understand a lot of these things can’t be found everywhere, some are seasonal as well, so we have to substitute with the closest thing we can find... I’d kill for some curry goat right now, but I get lamb instead. It’s not the same, but really close if done right

ChildofGodFirst hella late on this but, it depends on the type of squash you use, if it’s the hard type add it from the beginning (I made the mistake adding it last and Jesus Christ it took forever to boil out)

Caribbean soups are very much like North American Stews.. full of body and comforting. Typically there would be more starchy ingredients - yams, sweet potatoes etc

I’d just like say this soup came out amazing for me. I followed all the steps except for the meat carrots & allspice pepper seed. I’ve never tried scotch bonnet in my soup before but mmm-mmm what a zing it gave to the flavor. Thank you for sharing.

Ok so...(getting excited) if I add more potatoe, could I avoid the cigarette dumplings?? I don't dig dumplings?? I got some smoked hamhocks so my salt should be the right amount I think? After watching this (the first time) My husband (of 32 years) notice a giant smile on my face and said... "Oh oh... We like to fry the dry beans,by that I mean we fry the seasoning vegetables (onion,celery,carrot,garlic,etc.) along with the dry beans as this allows the flavored oil to penetrate the skins of the beans!Once the oil has all been absorbed cook your beans as usual...you'll be amazed at the difference this makes!!!

An alternative to the pig tail could be salt beef. I use salt beef for this recipe and don’t add my salt as the salt beef usually has enough.
