In St Lucia we call it gooseberries and the patois version is Seewet. To take out the sourness from it I normally soak it in some salt water overnight then next day I wash out and start boil it. I like adding bayleaf, cinnamon, nutmeg and clove to flavor it along with the sugar and it tastes nothing short of amazing. I'm about to make some for my in laws to take back to the States. Great job Chris. Next time I'll add ginger to it as well.

I've learnt that you shouldn't add too much water in this initially as it springs water naturally while cooking and takes longer to finish. He made what we call red cherries-a snack instead of a jam. Tasty though!

Yes, purplish even. My grandmother never used coloring and the end result was very very dark.

In florida we call them surinam cherries...ours are already orange to red when ripened. I am going to treat as strawberries when making the jam and will use a strainer to get rid of the seeds...

They are really west Indian sour cherries. They make very good juice. Goose berry is a shrub. But west Indian sour cherry is a tree.

Go nzo I think it's a different species than what we usually think of. These cherries aren't naturally red. I don't think marichino cherries are naturally red either.
