I Like the stew beef recipe but I never eat it with yam.In my home stew beef and white rice and a stew peas on the side or wend you cook the stew beef we put christophene or white potatoes in stew beef I give it a thumbs up

in Jamaica the part where you put the sugar in the hot oil until it turn golden brown is what we call 'burning the sugar'.It's nice with chicken too

Lime and salt the beef first thing,leave for a little while, wash the beef off throughly, then put the green seasoning, your choice of herbs and spice and leave to marinate overnight, the Bajan way enjoy:)

place it in a sealed container in the fridge or freeze in an ice cube tray. Then use for when cooking stew chicken, beef, pork, fish.. curry dishes and as a marinade when grilling meats. It can last for months in the fridge.

Chris baby, you are an original,true to yourself non pretentious man. I say so because your words and language is from the caribbean and aimed at caribbean people and your words are not confusing. for example it took me a while to understand that what a lot of Guyanese presenters were doing is using regular Guyanese words / accent and then suddenly interspersing their explanations with American ( some other watchers think it is American accent) e.g. you said quite clearly " stewed" these other people are saying " stU" you say tuh-mah-toes they are saying "to-MAY-toes". I am reminded of the Tradewind singers and their song "COPYCAT" check it out, and have a laugh at the " wannabees". Any way brother man great recipe as usual. Another thing Chris is this, do you think those people still understand reggae, calypso, words like dal, buss up shut and kuchela, or they saying words like " roggo" instead of reggae, " coolipso" instead of calypso and doh instead of dal, and burst up shirt instead of buss up shut, and "coo choo lo" instead of kuchela.

+++ need recipe for brn/stewed chicken! my ex's mom from trinidad made the best. i have tried dozens of recipes, one came close at jamaica culture and food. Man i wish i would have learned this recipe b4 i left his sorry ass over 14 yrs ago. lol! i didnt see it on your website but i would like to try the stir frys. one thing about Trini's,mostknow how to cook all ethnic foods better that original natives. lol, my mom and nan is English. They have no more than salt, pepper and seasoning salt in the cabinet, plus picky so i don't know where i got it from, i try to cook all ethnic food, except for Vietnamese, too hard! It was gr8, spicy, so they would probably have hiccups for a week.!!!!

Right after you add the beef. You will get a nice brown color on the potatoes, then when you add the water it will cook off the potatoes. Make sure you soak the potatoes in water and salt to get rid of the extra starch.

I saw on TV a tip or trick, if you want to call it that, on how to make a stew more shinny and glossy at the end. Just mix about Tablespoon of unflavored gelatin in half a cup of water and add it to the stew towards the last hour.

Hi Chris, what would be the best cut of beef to use to get the most tender, no dry tasting stew? I using stewing beef bought at the grocery store and it turned out a bit chewy and dry. The flavours were amazing though.
