Most used oils are Veggie and canola but use what you like, they all work for most cooking. i use mostly EVOO

Mann...Tampiquena's that I enjoy the most came with the soft beef taco, tostada, enchilada, rice, fajita , avocado ect...this dish is basically endless in combinations. I can't believe how the prices for this plate has gone through the roof after covid. $8.99 before $18.99 today for just the basic plate!!

I go very hot oil. Use the tongs to to judge when the tortilla has only just begun to get too firm. Remove the tortilla and allow the excess oil to drip back into the pan. Then soak it in the sauce until it becomes completely soft and pliable again. The sauce reverses the crisp and firmness, if it's not too severe. This creates a nice, rollable tortilla that never rips.

Add 2 T. of finely chopped celery along with the rice to take it to the next level. This is one of those things that will make you smack your forehead and say, “Ayy-yai-yai! Why didn’t I do this before???”
