I cut a 10 lb. chub into 20 x 1/2 lb. patties, mass cook them in the oven or on a grill, cut them up into bite size pieces, put two cut up patties into individual containers, add a sauce and cheese, and reheat for my lunches in my trucker oven. It provides me with two weeks of lunches. Freeze containers until ready to use. This replaces the laborious task of forming meatballs.

I do this with a bag of chicken breast cutlets - cook all at once then freeze in glass containers so they are ready to nuke for lunch n dinner. I really think this is key in our society - meal planning!

I'm only about a couple of months in, and still getting good mileage from your burger steaks + gravy-from-the-pan-scrapings idea. I use bone broth as stock, and there's always some cream in the fridge and garlic powder in the cupboard. It feels like I might never get tired of this. I season the burger steaks with rosemary on the outside. Nonetheless, the "ground beef 101" is much appreciated since I'm still in the R&D phase with respect to optimising my "system" for quantity, enjoyment and practicality. It will be good to be able to mix it up a bit. So, thanks and Happy New Year!

Brown 1 pound of Ground Beef (no salt) add 2 cups lower sodium Chicken Broth, cook on high heat until Chicken Broth is almost gone, add a knob of Butter & enjoy :) this gives you half a teaspoon of salt per pound of Meat & this is nicely seasoned for me.

@davidyummus6259
@davidyummus6259 11 күн бұрын
@@GM-jv9jz I understand why you are saying that but because you are reducing 2 cups down to like half a cup or less, Beef Broth is too rich , the Chicken broth is lighter & works well,... If you are staying close to the original 2 cups for a Soup then sure, Beef is good. What I am doing here is reducing 2 cups of Broth down to a gummy sauce for the Ground Beef.

I'm not 100% strict on this way of eating; more like 90% (main issue is with gluten so I enjoy my hashbrowns on the weekends lol). One thing I've done that was a game changer in not eating the same few things over and over was to invest in a dedicated meat grinder (doesn't need to be expensive). This allows grinding your own burger from larger primal cuts so you know there's no additives or funny business going on, but also opens the door to being able to make many different kinds of sausages (cased, bulk, aged, etc). With a little prep it's fairly easy to go a week without having the same "meal" twice.

@@Tessa--LibrarianLovesRick I get #10 pork butts and turn them into several different types of sausages. Some are brat size, other are the small breakfast link size as well as bulk patty's. The trick for me is keeping the flavors different so there's some variety (I give myself a pass on spices and seasonings :-). Also whole beef chuck rolls (it's a #20-ish pound of muscle that the chuck roasts are cut from along with a couple different types of steaks (look up Denver steak and chuck eye steak). You also get a bunch of burger from this cut. Hard to beat fresh ground burger 😋! Brisket is another big hunk of meat that can be versatile (get a couple when they're on sale ;-). Gonna try making cheeseburger brats this weekend lol.

I make ground beef jerky. I flatten patties to about 1/8” using parchment paper, put in a dehydrator at the high setting and check it hourly. I usually finish in oven at 175 for 15 minutes just because I’m a germaphobe. Great for traveling.

I was a bit cynical about the air fryer when one was gifted to me a few years ago but 2 years later it’s now my favorite way to cook a lot of different foods. For burgers I’d make them 1/2 inch thick and then airfry at 400 degrees for 3-4 minutes then flip them and repeat. Experiment with the first one based on how done you like them and adjust accordingly. I’ve not done burgers in an air fryer so I’m just guesstimating here.

What about the gas put into ground beef to give it the red color? What brand and grade should one buy?

If you can afford it you might find a local farm that sells grass fed/finished. We find that we can afford it because we are not throwing away money on junk/fast/manufactured food. Good local beef might be $9/lb, but Lucky Charms are $12/lb.

@CarnivorousChef Thanks for the reply. Was that raw & cold? Or cooked and cold? Just wondering. I would never eat raw meat, but I would eat it cold if cooked (and have) but it isn't as good. The cold fat just isn't as tasty to me.

I do ground lamb. Gives your palate a different taste. The Lebanese add just a touch of chili powder and cinnamon plus the obligatory salt n pepper. The cinnamon seemed weird but my wife (Lebanese) had me try it. It's a great way to change up red meat.

Peanut butter why do you automatically think if people can’t afford meat that they are eating junk food! I have done Carnivore for 6 months lost 53 lbs and i can’t afford to buy steaks every day. I have to watch for meat on sale. Also my wife is not on carnivore diet so we are buying for 2 different menus. I am sure there are more people out there do the best they can and don’t buy junk food!!

Making a hamburger patty is a hack? Really? Ground Beef? I'm curious what old boring, I'm tired of this cooking method, are these hacks taking the place of. Dumping a package into the pan and cooking as it lays? You could have suggested some Beurre Monte Butter Sauce at least!
