CARROT CAKE
Preparation time - 10 minutes
Baking time - 1 hour
220 g sugar
2 eggs
300 g of peeled carrots
40 g yogurt
120 g vegetable oil
220 g flour
1/2 tsp baking powder
1/2 tsp soda
1/2 tsp ground cinnamon
1/2 tsp ground ginger
1/4 tsp ground nutmeg
100 g ground walnuts
zest of 1 orange
juice of 1/2 orange
Impregnation:
juice of 1/2 orange
Cream:
130 g cream cheese
30 g powdered sugar
30 g yogurt
1. Sugar is mixed with oil, yogurt, eggs and orange zest.
2. Sifted flour is mixed with soda, baking powder and spices.
3. Add dry ingredients to the egg mixture and knead a homogeneous dough.
4. Carrots rub on a small nozzle.
5. Add orange juice to the dough.
6. Spatula mix the dough with carrots.
7. Add the chopped walnuts and mix until smooth.
8. Pour the dough into the parchment-covered form and put it to bake at 180ʼС for about 60 minutes.
9. When the cake is ready, let cool a little and pour orange juice.
10. For the cream, mix the cream cheese with powdered sugar and yogurt.
11. Remove the cake from the mold, decorate with cream and sprinkle with walnuts.
12. Cut and enjoy!
