Carrot Date Cake

This Carrot Date Cake is moist, delicious and rich! Every bite of it is a feast for your tongue ;) And it is really simple to make as well. It is a great cake to make during Christmas but I couldn't share it earlier as I was quite busy so I am sharing it now. I hope you all like it! Also I do recommend baking this cake the night before you serve it and allow it to cool completely so that it gets time to rest and the crust moistens and it tastes so much more delicous. Enjoy! :)
Ingredients:
*1/2 cup sugar + 1/4 cup hot water (for the caramel)
*1 cup all purpose flour
*3/4 tsp baking soda
*1/8 tsp salt
*1 cup grated carrots
*1 cup finely chopped dates
*1/2 cup finely chopped walnuts/pecans
*2 eggs, at room temperature
*3/4 cup sugar, powdered
*3/4 cup oil
*1/2 tsp vanilla extract

👍Looks yummy! I’m going to try this a couple of ways 1)with gluten free flour and 2)I’m going to try to make it more keto friendly by using ground flaxseeds instead of flour and I’m going to see what I can do about using a healthy sugar sub (maybe more dates or date sugar or coconut sugar & coconut oil) IDK but this recipe is a great base for me. Mine is burning from top, is this how it is suppose to be? I kept it on 180°c n just in 15 mins the top started burning, i set it to 160°c even after 1 hr it is uncooked :(

It depends on the type of oven used too. If its a convection oven or if the coil is on top, this could happen. In that case adjust the height of the cake tin accordingly. And if if you did adjust your temperature setting, take the cake out only when the toothpick inserted comes out clean. In my place we have the option to use aluminum foil to cover the top if its burning. But i am.not sure if that trick works on a convection oven

it turned out really well. except for the oven temperature. 180 degree C kinda burnt the cake in the first few minutes.. then I resorted to rough guesses and saved the cake. overall the texture is awesome so awesome. will make more of it. thanks a lot

@@NANNZ845 approximately same time in cooker too with the lowest flame and with the stand base inside the cooker and whistle and rubber gasket removed. But to be on the safer side, you should open and check around at 40 mins and insert a toothpick to determine doneness. Please do not forget to keep on lowest flame, or it will be a disaster!
