Easy recipe for great tasting Carrot Halwa prepared using Khoya/Khova savored in darshinis and hotels. Narrated in Kannada with English subtitles.

Ingredients:
Grated Carrot - 5 Cups
Sugar - 1 and 1/4 Cup
Milk - 1 Cup
Khova or Khoya/Mawa - 1/4 Cup (optional)
Cream or Top of the milk - 1 Tbsp
Ghee or Clarified Butter - 3 Tbsp
Raisins - 8-10
Broken Cashew Nuts - 20-25
Cardamom Powder - 1 tsp
Instructions:
1. Add 2 Tbsp of Ghee/Clarified Butter to a pan. Once the Ghee melts add 8-10 Raisins and fry till they turn golden in colour and slightly fluff up. Remove to a bowl and keep aside.
2. To the same heated Ghee, add 20-25 broken Cashews and fry till they turn golden in colour. Once done, remove to a bowl and keep aside.
3. To the remaining Ghee in a pan, add 5 Cups of grated Carrot and fry for 5 minutes.
4. Add 1 Cup of Milk and mix well. Add 1 Tbsp of Milk Cream or top of the Milk to the carrot and mix well.
5. Cook everything till the water content in the pan completely evaporates.
6. Close the lid and cook for about 5 minutes. Then continue to cook the carrots till they turn soft and the raw smell of the carrots disappear. This may take around 20 minutes.
7. Add 1/4 Cup Khova /Khoya (Optional) and mix well. If not using Khoya add 2 Tbsp Ghee to the Halwa.
8. Then add 1 and 1/4 Cup of Sugar and mix well. Now again Sugar will dissolve and leave the water content from itself. Cook till water evaporates and the carrots in the pan change their colour slowly while the mixture starts to thicken.
9. Once the water content evaporates and mixture thickens, add 1/2 tsp Cardamom Powder and mix well.
10. Now add fried Raisins, Cashews and 1 Tbsp of Ghee and mix well. Ghee will enhance the taste of the Halwa and also gives the shine to it.
