This recipe for HEALTHY CARROT MUFFINS is wonderful, it is made in a blender, it has many substitutions to make it as healthy as you need it and it is delicious !!!!
Instead of refined flour we are using oats (gluten free) and almond flour.
We are using coconut yogurt (dairy free) for people who are intolerant or vegan. If you consume them, you can substitute the coconut yogurt for Greek yogurt.
As a sweetener, honey you can use bee, agave, organic maple or whatever option you are used to. As well as coconut sugar, which you can also substitute for Monk Fruit or any of your preference.
I recommend making apple purée at home, it is very simple and the best and it will not have preservatives.
The more ripe the bananas the better, as they will give more sweetness to the recipe.
If you do not consume eggs, you can replace this with a tablespoon of flaxseed plus three of water or a tablespoon of chia plus three of water.
As you can tell, you can play with the ingredients and make it according to your needs.
