WHO WE ARE
In 2015 we quit our lives in the city to buy bare land in the country and build a timber frame home from scratch with our bare hands, debt-free, with no prior experience. It’s been a wild ride of ups, downs, highs, lows, rain and rainbows, but we haven’t lost sight of our goals and have gotten further in three years than we thought we’d get in ten. Join us as we build our house, develop our rural property, practice traditional skills such as gardening and food preservation and go to even greater heights (literally) of exploring the world through aviation as a new private pilot!

Jesse & Alyssa, I have a friend who is from England and she covers her root crops in late fall, leaving them in the ground to be dug during the winter, so they are fresh. This is west of Chicago, and we get pretty hard winters. She uses old blankets or quilts -- ain't too pretty but it works.

I really like drying nettles and adding them to our food during the winter for extra iron and vitamines. I find they only keep for one year however, after that the taste is not the same and the color fades somewhat. Remember to store your dried herbs and greens in a dry cupboard, away from light!

Great video ! I have drying suggestion. I think the reason for the strong taste is due to the amount of chlorophyll still active in the leaves while they are drying. Plus the amount and kind of light you have will keep the process alive while the stem dries out. If you build a small drying cabinet, that is light proof and add a very small fan to keep the air circulating inside, the process will stop sooner, faster. Drying time should be faster also. Every 24 hours open the door and burp the air inside. The taste may improve. You can also get a cheap humidity moniter. That way you'll also know the moisture content of your leaves before grinding. I hope this helps. Keep up the great work !! Have a wonderful day !!

Strawberries come back every year, they have runners that's what makes more plants so when the time is right you need to take them out of the container so you will have more plants. Those roots on the carrots would have made the carrots longer if they had more dirt and room to grow. They make nets to put the carrot tops in to keep the flys and other bugs off while drying.

Just a quick question: why not drop the leaves directly into the blender rather than first into a container - which you'll then have to wash - to save time? Also, are you selling the leaves? If not, you really can't say that you're "earning" anything. If you planned to buy such a product, then you'd be saving money, but unless you sell it, your bank account won't increase. Love the harvest!

HEY JESSE AND ALYSSA, GREAT VIDEO GUYS, I HAVE NEVER THOUGHT ABOUT THE GREENS OF THE CARROT BEING EATABLE. WE ALWAYS WOULD PUT THEM IN THE COMPOST BIN. IN THAILAND WHERE I LIVE PEOPLE DON'T DO CANNING AND I'M GONNA BE MAKING AN EFFORT TO INTRODUCE IT TO THEM. MOST PEOPLE GO TO THE MARKET EVERY DAY AND BUY EVERYTHING THEY NEED FOR THE DAY AND IT'S ALWAYS FRESH AND ORGANIC. THE PROBLEM WITH THE THAI PEOPLE IS THEY GET INTO A RUT OF DOING SOMETHING A CERTAIN WAY IT'S ALMOST IMPOSSIBLE TO GET THEM OUT OF THAT RUT AND DO THINGS A DIFFERENT WAY. I THINK SHOWING THEM THIS, IT MIGHT MAKE THEM SEE A DIFFERENT WAY OF USING SOMETHING THAT THEY WOULD JUST PUT IN THE COMPOST BIN.

I think they talk about it in an earlier video like over the summer or last spring, just look back to late last spring/early summer to start. Typically, videos are weeks to a month, sometimes more behind due to the time required to edit all those videos and be a mother/wife and contribute to the household by cleaning and cooking etc too.
