I still believe that Gusteau was poisoned by his head chef. Since based on what we saw of him, he had a determined nature. He wouldn't have given up or died from grief like they say he did. Plus looking at how driven this head chef was to "selling out". It would make sense. It is possible this was originally supposed to be revealed in this movie, but instead the idea was scrapped and used in a later pixar movie. Specifically COCO. Also remi being gusteau reborn also makes sense.
