How to Make Chicken Fried Rice With Cashews at Home. Easy to Make Biryani
Ingredients :-
For the Cashew Chicken
Cashews(halved) - ¼ cup
Boneless Chicken Cubes(breast)- 250 gms
Dark soy sauce- 1tsp
Sweet chilly sauce - 1tsp
Salt & pepper to taste
Sesame oil - 1tsp
Sliced Garlic- 1 tsp
Diced Onion - ¼ cup
Sliced Red Chilli- 1
Diced Mix Bell Peppers- ½ cup
Corn Flour -1tbsp
Chicken Stock- ½ cup
For the Fried Rice
Boiled Brown Rice - 1 ½ cup
Sliced Spring Onion Bulb - ¼ cup
Light Soy Sauce- 1tsp
Salt & pepper - To Taste
Sesame oil - 1tsp
Start with preparing the rice first
For that:
- In a pan, heat sesame oil and add the spring onion slices. Sauté for a few seconds and then add the rice.
Season with salt & pepper. Add soy sauce. Give a quick toss to just combine all the ingredients. Take it out on a serving platter & keep aside.
For the Cashew Chicken
In a bowl, add the chicken cubes, salt, pepper, soy sauce, chilli sauce & mix well. Add a little corn flour & coat the cubes well with it.
- In the same pan in which you prepared the rice, add some regular oil & gently roast the cashews till golden brown. Remove & keep aside on an absorbent paper.
- In the same pan, sear the chicken cubes on high flame till they turn golden brown. Remove the pieces on an another absorbent paper.
-Now pour the balance sesame oil to the same pan and add thinly sliced garlic. Sauté till golden and then follow it up with sliced red Chillies, dices of onions and mixed bell peppers.
Season with salt & pepper.
Now add the fried Chicken cubes and chicken stock followed by a dash of some more dark soy sauce and sweet chilli sauce. Give it a stir.
Make a slurry with 1tsp Corn flour and 2tsp chicken stock. Mix well and immediately add to the chicken gravy. Bring it to a quick boil. This will thicken the consistency of the chicken gravy.
Finally, add the fried cashews and transfer the prepared chicken next to the fried rice.
Garnish with fried cashews & spring onion greens.
