PRO TIP: Tomato bread is THE BASE FOR EVERY SANDWICH in catalonia, as mayonnaise is for americans. Instead of spreading mayo on a sandwich, we rub in in tomato, drizzle olive oil, and then we fill it with ham, cheese, bacon, chicken whatever a sandwich can be filled with. PD. In catalonia we rub the tomato on the bread, not pulp it. They sell a specific variety of tomato (tomàquet de penjar) that rubs very very well leaving only a really thin skin behind. However, the method shown here is used in many restaurants bc it accepts all types of tomato and is more tomato forward to eat it as a tapa.

I learned to make something similar to this when I was in france, come to think of it, the person that showed me was originally from catalunya. The main difference was instead of grating the tomato pulp, you just rubbed the half tomato right against the warm toasted bread

Yes Yes, don't grate and spoon on, scrub the tomatoes directly into the toasted bread (optionally after scrubbing in garlic). Then drizzle olive oil on top, (optionally finish with tiny sprinle of salt, Kosher is good here). That's what we learned living in Barcelona for almost 3 years. Ideal result is rustic, not neat. Crispy bread tears the tomatoes, and the tomatoes soak and soften a small layer at the top of the toast. Mmmmm!!

My Spanish friend introduced me to “tumaca”, it’s made of shredded tomato, fresh garlic (I microplane it), salt, pepper, and olive oil- whisked together and the tomato juice and olive oil seem to emulsify into a delicious velvety sauce/dip for toasted bread. Simple, bright, and delicious!

Sounds good-- I'll have to try that as well (especially now that I've found a Mozarella with actual flavor), but my grandmother always said, when you first try a recipe, follow it exactly-- then tweak next time, if you wish. Of course, there are those lucky folks who can actually read ingredients and know what it will taste like and are brilliant at knowing what to add and how it will taste. @@juliastraus4273 Tomatoes have a lot of glutamates(like MSG) already in them. Not sure what you mean by the "isn't really cooking" comment? Powdered MSG is used in a lot of different cuisines to boost umami flavors. It's a completely natural ingredient. Using some MSG in the dish from this video actually makes a lot of sense. It would be a great way to boost the natural umami present in tomatoes without changing the flavor profile of the dish.

"Just two ingredients" - Ciabatta bread and tomatoes. And salt. And garlic. And olive oil. And flake sea salt. 8-) Still, simple enough. I've made something very similar that was (if I recall correctly) presented as an update on french bread pizza. The use of a grater to get instant sauce from a fresh tomato was the big takeaway for me. I've also seen a version where you rub the cut tomato directly on the toasted bread. Delicious, and I'm glad to learn of its likely Catalan origins.

S is also good with sourdough bread and french baquet and semolina bread also I make a garlic spread by putting a cup or more of peeled garlic cloves in my ninja chopper with a couple of heaping tablespoons of country crock churn style marjarine and 1/4 cup or more of xtra virgin olive oil in the chopper and blend till a smooth paste like soft butter and I spread that on the bread for a nice bed for the sliced or grated tomatoes . U can add oregano and flake salt and it’s yummy

Home grown tomatoes are amazing and you have the option to grow the same varieties that other countries prize. Tomatoes are native to the Americas so it’s not that they cannot grow deliciously. It’s that farmers mass produce crappy varieties bred to stand up to shipping.

In general salt, pepper, oil aren’t counted as they’re something you’d already have to cook with. Also garlic in this recipe is optional. So really it’s bread and tomatoes.

The 2 ingredients claim is in the intro, it's not about the recipe. But also, the 4 additional are Garlic (optional), Salt, Sea salt, Extra Virgin Olive Oil. Salt and EVOO are staples. IMO Flaky Sea salt is too so the optional garlic is really the only thing you need to make sure you have fresh.

In laboratory studies, acrylamide caused cancer in animals. The FDA is now conducting research to determine what levels of acrylamide in food pose a health risk to people. The FDA would advise people at higher risk of certain bowel cancers to avoid charred foods. So I would say my aversion to something that tastes like cancer is objective, not subjective, and what you meant to say is 'I'm wrong'.
