Ovens heads back out into the bush for a catch and cook grouse parmigiana, his own bushcraft version of chicken parmesan. Follow along as Greg travels out into the Rocky Mountains to harvest wild spruce grouse, prepping them in his "bushcraft kitchen", before cooking the meal on a wood fire.
Greg is a self-taught survivalist from Canal Flats, British Colombia, who, since he was a boy, has read nearly every book on the topic. When he is not out in the wilderness, he is a professional dry-waller. He started his first bow drill fire when he was thirteen and spent the next forty years learning bushcraft and studying plants and edibles. He has even developed some of his own survival techniques and is a skilled hunter with both a bow and a slingshot.

I knew about rigor but didn't know about that for game. Now I'm questioning whether draining a deer asap is still the right choice or not. Everything I was shown as a kid is now in question.

Your show is FAR better than Gordon Ramsey's. Your channel is one of my favorites by far. I really wish I had a dad / family member like you around - especially when I was growing up. Anyway, thank you for what you do. You allow people, who live in modern society, to see where life's true happiness began is still remains - for 15 to 30 minutes anyways ;)

By far the best KZbin on KZbin it’s 12.30 am and I can’t sleep as I suffer from severe anxiety depression 😌 in no way I’m looking for sympathy but this man man got me out door sir I did my first catch and cook it was a 2kg flat head so about 4.4 pounds with some butter cooking on fire out doors I’m lowering my dose of meds thanks sir

Coming back to view this classic piece of content in October 2023 near Halloween. For some reason I couldn’t get this delectable dish out of my mind since august, a rewatch was in order and it was a better watch than the original. Kinda like wine, it gets better with age.

Right out of the gate, Ovens delivers familiar content but with his own unique style. Whether it’s grouse Parmesan or grouse parmegienne (with mozzarella) it’s a catch and cook like no other. Down to earth from the “I can’t find the clip” honesty, combined with zero glam prep on the hood of his truck make this not just a tasty dish but a refreshingly humorous “roast” of every catch and cook on KZbin. Add the Fowler mischief with the editing (zacsquatch) and you’ve got a winner of a channel. God bless and keep up the great work guys.

Great Video, Many years ago as a young man, I took my girlfriend camping in the Livingstone mountains and amongst other pleasures we enjoyed a delicious cook up of ruffed grouse and Cutthroat trout in a high mountain meadow/campsite very much as you presented here. Ahhh the good old days, I got a wife and a great hunting/fishing spot out of that trip... the wife lasted 26 years... the Hunting/fishing spot 36 years...then it got clearcut. Oh well, nothing lasts forever...except the memories.

Greg watching your videos brings me back to when my dad tought me Bush craft. a trick he tought me was a salt brine for grose in the latter season helps cut the pine tast when they switch from barrys and seeds to pine needles. oh man i could go for some right now.

Hi mate, here in Australia, we have cast iron camp ovens that I think you would hugely benefit from. It is basically just a big steel pot with a steel lid that you can put coals underneath and on top. You can cook so many things in them from, stews to roasts to, breads and cakes! I hope you like the idea and can source them from Canada.

I'm so glad you have kept doing the videos after the 30 day challenge. It was weird to hear the intro without that opening montage. I do enjoy the little cuts into the video also. Bushcraft and survival (wilderness or otherwise) is dependent on being able to improvise and adapt using a well practiced skill set. Greg, you are really good at demonstrating this principle in every video you do. You also show that a fella can enjoy doing this without a massive budget. Excellent content!

Mmm... I'm going hunting for the first time this year, and I figured I'd start with forest grouse, as they're included with my Washington state small game license. A lot easier to clean/dress and carry back to camp than a deer or elk, too.
