For Halibut I really like it steamed, topped with green onions, ginger then drizzled with piping hot peanut oil, sizzling it.. then topped with soy. Basically, Chinese style

*Per 1lb of meat* 2 tbsp honey 2 tbsp melted butter 1/2 lemon- juiced 2 tsp soy sauce 1/2 tsp pepper 2 cloves garlic- minced Mix it all together and marinate the fish! Slap it in a pan on high for about a minute and a half on each side. Turn the heat down to medium and cook each side for another 2-3 minutes or so! Love your videos man, keep it up!

It is very important to let it dry after the brine. This is called forming a pellicle. A critical step to increase flavor and keep the fish moist. I put my fish on racks and put a fan on them for 2-3 hours in a cool location. 180F is pretty hot also for smoking. I always like to use a wet brine rather than dry brine the fish so the fish retains more moisture. 👍🎣 Enjoy your video and hoped you would have limited out! 👍🎣

Over a year since you put out this video I know, but my Wifie made a pretty great Halibut Omelette with our leftover Hali meat. She shredded up the huge flakes then just added it to the eggs, along with the seasonings, tiny diced potatoes and green onion. It was really good and somehow sweetened up the meat to taste very similar to crab meat. She had done this with lingcod before but I mistook it for crab back then. Over rice or in a sammich with melted cheese, was deeeeliscious. Thanks for your videos, you’re one of the west coast fishing heroes that inspired me to get off my butt and go out into the sunlight, hit the beaches, streams and lakes. You sir, are appreciated. Love your videos, makes me want to go fishing! My favorite way to eat halibut is halibut ceviche. Freeze your filets first so it will be easier to cut them.. when still frozen and starting to thaw, cut them into tiny cubes. Add onion bell peppers, jalepeno, avacado, and tomatoes. Add freshly squeezed lemon and lime juice. The citrus acid cooks the fish pretty quick. then scoop up with tortilla chips! So good!

My personal favorite way to cook halibut is battered and fried, but using the right batter makes a big difference, personally I've had the best results using a thin tempura batter. Little bit of salt before the batter and your golden.

Hey! Cracking video, always love watching your stuff! We get similar size halibut here in the UK - best way to cook it to keep the fish moist & tender is to poach it in warm oil - just heat the oil until it is slightly too hot to keep your finger in, then slide the seasoned fish in & maintain that heat for around 15 mins. Take the fish out very carefully, as it will be really easy to break it up, and you can also drain off the oil to get to the juices at the bottom of the pan - add some lemon juice & it's an amazing sauce! Love your vids. In China we bake it at a high temp. A little oil on the pan, fish in full fillet paprika, garlic powder, salt and pepper. Thin slices of ginger over the top with slices of lemon and knobs of butter on the lemon. After baked (just after it isn't translucent) transfer to a plate. And all those juices pour over some steamed rice. Oh yeah, lots of people here will do the same thing but steaming the whole fish instead of baking.

Another freezing fish tip. Place fish in an appropriate sized Tupperware styled container....cover with water...but leave enough room for the frozen water to expand. The fish when thawed will taste just like the day you caught it. Enjoyed the video. Wow...your channel has sure grown since I signed on and you only had a couple thousand subscribers! Congrats!

Hey Matt. My Dad loves fishing also. But most of the time my dad steams the rockfish as soon as they bring it back home. The ingredient contains green chopped onions, chopped ginger in slices, steam on high heat for 10 minutes. Then take it out on a tray base it with hot oil and add soil sauce, since you like butter a lot, maybe butter would be good for you, but I have never tried it with butter. I would really like to see you do that on one of the videos. Thank you

My absolute favorite recipe for halibut is cutting it into thin 5cm slices then dipping them in a egg wash then into panko and fried in grape seed oil. the thinness of the fish allows you to cook it in 30-45 seconds and its super moist and flakey while still being crispy on the outside, You gotta go thin on the slices. Another good way is just a nice fillet on medium-low heat with some oil in the pan, some herbs are always a nice touch then depending on the size, like a 1lb fillet about 5 minutes each side but a easy way to tell is just by temp, get it 125f in the center and let it rest about 5-8 mins. And about 2 mins before you take it out thats when you put the butter in so it never burns and you get a nice piece of halibut that is very flakey and moist because on the low heat the water is not evaporating from inside the fish as much. I also love spinach with mashed potatoes as a side and clams or mussels are always an amazing addition. Hope this helps you for the future! I also prefer lingcod to halibut but it really depends on the dish! Great Video! keep up the amazing work!!!!

Awesome video! 1 cup olive oil 2 tbsp soy sauce, 4 garlic cloves minced, some garlic salt, pepper and squeeze a whole lemon in there. Mix and brush onto the halibut and cook in a grill basket roughly 4 to 6 minutes per side. Add some mexican hot sauce and enjoy!

Coat fillets in olive oil. Then add your lemon juice. Season salt, and pepper. Make sure to do both sides. Set on the grill and add more lemon juice. Salt and pepper as you go. When you flip it, you guessed it, add more lemon juice and salt n pepper. Do not over cook. Great for tacos with guac, or as a stand alone dish.

@@FishermansLife My dads a huge fan of yours aswell he binge watches your content. We all need to get on a livebait halibut trip this season we would love to meet and fish with you sometime. HERES A RECIPE WE got from our Alaska trip its it's called poor mans lobster 1 cut halibut in 3/4 inch chunks thawed 2. Boil 8 cups of water with 1/2 cup of sugar and 1//3 cup salt 3. Boil chunks for 60-90 seconds will start floating when this happens continue cooking for 30 secs more 4. Scoop out put on paper towel to dry let rest for 5-10 min 5. Melt butter and dip away Or???? you can sautee some white onions and butter and sautee halibut in it for 2-3 minutes and serve over white rice with fresh lemon squeezed over its delicious bro.. Yeah, halibut is not really oily enough for smoking. Same with ling and RF. Now next time you run across some of those bigger mackerel we get around here, I HIGHLY suggest you smoke some of those. They turn out great! Just make sure you keep them very well iced. Just gut them and brine/smoke whole, head-on. Letting the fish dry after brining forms whats called the "pellicle" which supposed to be a pretty important step. I guess I've been lucky, but I always let it form a pellicle, and I have always been very pleased with the results. Love your vids .

Lemon juice, butter, dill... Cover with ritz cracker crumbs and bake. Can add crab meat and dices scallops with the cracker crumbs. This works for any slat water flat fish or bottom feeder fish. A little drizzle of olive oil before baking, or a brush with melted butter, will keep the cracker crumbs from burning

Whenever I cook halibut, I usually make fish tacos out of them. I make similar sized cuts from the fillet. Next, I beer batter them with half Louisiana fish fry mix and half Bisquick. I add a whole 11.2 oz Asahi or Sapporo beer and added water just to thin it out slightly. Not runny but not super thick. Then, take those fillets and dip them in a bowl of blended eggs prior to the batter. Cook them in some olive oil until golden brown. Turns out super delicious!! I serve them with either a flour tortilla or corn with homemade salsa...can't go wrong.

I don't know anything about halibut but I have an idea for you, it works wonders for me. Take your fillets (any fish/poultry is fine) and soak them in lightly salted water for about 30 minutes, take them out and give them a generous coating of olive oil, crushed peppercorns(ground pepper is ok) salt, lemon and butter. Wrap it in foil and toss it on the grill, should turn out like gold 👌

A must of any boat fisherman especially for small boats is organization. If you keep your boat organized and clutter free landing fish is so easy. And don't over tackle. One guy ten rods tackle bait ropes etc. A cluttered deck is a stressful situation.

The flatfish that I usually get here in Oz are flounders. The easiest cooking method for me is to fry some ginger slices in sesame oil till they're crispy, remove the ginger, dust the fish with some potato starch and pan fry it in the sesame oil. Once done, plate it, put the crispy ginger on top, and drizzle some fish soy sauce + sesame oil (from pan) over it.

Man...not the type of smoke I was thinking but its all good. Any reason you skinned prior to smoking? I was taught best to leave the skin on.

Same. I always cook fish with skin on and my grandpa smokes his fish with the skin on. Keeps it moist.
