Just a tip. Slice under the ribs to debone before skinning. There's a lot of meat under the ribs plus the belly. A thin slice taken out in the centre after skinning, removes the vertical bones. Fresh salmon like that is tasty.

How did you end up cooking it mate? Only ever had it smoked cause I’ve been told Australian salmon aren’t that good just cooked as fresh fillets. Or are they alright if prepared correctly ? Cheers.

Hey Trent. Smoked salmon is delicious. But when cooked on the same day they were caught, they taste immaculate. We just shallow beer battered these.
