I have probably used about every catfish bait out there in the last 60 years from night crawlers to chicken livers, to commercial dip baits and I have caught fish on every single one. Now days I generally use chicken breast, skipjack or cured carp simply because they are convenient, stay on the hook well and catch fish. By far the best catfish bait is the one on your hook, in the water, where the catfish are, when they are biting. 😉

When I'm cutting a fish into pieces of cutbait, I make the majority of the cuts with shears, which are like heavy duty scissors, and are made for cutting things like fish. These shears are commonly called kitchen shears, bait shears, marine shears, and poultry shears. For example, I might fillet the sides off a fish with a fillet knife, and then cut those fillets into smaller pieces using the shears. I sometimes cut a 10- or 12-inch fish into several pieces of cutbait using nothing but the shears. I occasionally sharpen my fillet knife because it gets dull, but my shears are still cutting like new after years of use, and I've never sharpened them. I also keep my shears handy when I'm filleting fish to eat, and I often put down the fillet knife and use the shears for some of the cuts.

I have kind of a dumb question. I know fresh bait is always better and I’m just now getting back into Catfishing, but I was in a really good spot the other day and only had some old frozen cut bait and I couldn’t get a bite to save my soul, I was wondering if that was because of the bait or just wasn’t the day. I’ve caught catfish there before and the day seemed perfect. There was bait breaking the surface and perfect conditions and features you would look for when Catfishing.

I've used all sorts of baits to varying degrees of success . Even blackberries . If you find a section of water with banks overgrown with blackberry bushes , keep it in mind . Catfish are not going to turn down any viable food source that is readily available . Just put a few ripe berries on a hook and toss it somewhere close to the bank when it's black berry season . Just make sure you save enough for bait .

Dieter, for a second comment, how do you not get snagged so much when you you use your carolina and santee rigs???? I can't figure it out. I recently went back to bobber fishing as that's how I caught my catfish last year and I get snagged on structure way to much without a bobber.

I found out recently that cut bait is illegal in Illinois because if a game warden stops you, he doesn't know what the size of the fish was and doesn't know if you may have brought it from somewhere else. Live bait is fine though with certain fish. That ticked me off, takes away an entire kind of bait man......... I had I window of time by some lilly pads where the bluegill were hammering my chicken breast and worms. I though I would find bass. I used those bluegill for live bait, ended up getting one snagged.

You can use cutbait in Illinois but it has to be caught in the same body of water and meet the minimum size limit.

You sort of danced around it, talking about don't over think it. But the absolute Number One rule of fishing is: You will NEVER catch fish if you don't have bait in the water. (With the one possible exception of Asian carp jumping into your boat. But then you just received free bait.)
