I must be honest in saying I would be eating/adding some of those veggies used to make the stock back into the broth with just the carrots and celery. This made sooo hungry watching. And the cat meowing was priceless in adding to the atmosphere inside that beautiful cottage. Brilliant as always ❤

3:14 insert Jurassic Park theme song. Vegetable Soup (The Cook's Dictionary, 1830, London) The stock: 3 large onions 3 carrots 2 large turnips, or 4 small ones 0.25 pounds of butter 1 stick of celery 2 slices of bread, toasted 8 cups of beef stock OR the water that a hunk of beef has been boiled in White pepper & salt to taste A tied bundle of fresh rosemary, thyme and parsley For the soup: 2 sticks of celery 1 carrot Prepare the stock by chopping up all of your veggies. Throw them into a deep stock pot with butter. On medium high heat cook the vegetables while stirring frequently until they are tender & the onions are translucent. This can take at least 10 minutes. Once tender pour in the beef stock or "boiling water" (the water that a hunk of meat has been cooked in), the toast, herbs, celery, salt and pepper. Cover and cook on low heat for 4 hours. Be sure that your lid is air tight. Once 4 hours has passed pour through a fine cloth or a mesh strainer to separate the stock from the solids. Press the cooked vegetables through the strainer to get as much of the stock out as is possible. Into it add diced carrots and celery and return to your heat. Cook on medium heat for 10 minutes then the soup is done. * This is the original recipe cut in half

Yummmy.....this is so good during cold weather. With lots of onions, it is like onion soup to me with little of carrots and celery. Onions are very good for the body.

I really love how some of these Recipes have stood the test of time.... Almost 200 years later, and this exactly the same that so many people make this Soup today... Also, such an important step that was done here is letting the Veggies soften up & caramelize a little over the heat, before adding the Broth... Great job Chef Justine!

Hahahaaa, upside down black bat kitty, my Beastie does this, he's my biggest baby. I remember my Grammy using everything in my Grampy's garden, it's how we lived. He did the gardening and fishing and shellfishing and repairs, she took care of the shopping for mostly dry goods and cooking and inside the house. And the flower beds. We lived off the land and sea, we'd have 3 piglets every spring to raise up for butchering in the fall. I'd go across the street and to the marsh to a house where they had chickens to get eggs. I was sent out to get veggies and bring them back to the house for supper, we call it supper here too, the later meal. Delicious homemade food and very little preservatives or additives. Old Scool cooking.

I do love your videos. They give us a snapshot into life long ago, without all our modern goodies. It might be interesting to make a video of how the housewife/cook did the clean-up after cooking a hearty supper or dinner.

I hope to learn how to quilt someday!! I respect anyone who can. It's an art. I adore looking at all sorts of quilts. So much work goes into them. Right now I'm trying to focus on learning how to sew dresses. I made a modern maxi dress 4 days ago and wore it out for the first time yesterday.

@EarlyAmerican. Hey Justine. I don't know if you guys have answered these questions in a past Q&A, so I apologize, but: 1. Why did you choose the early 19th century. Is it your favorite time period? 2. Did you guys ever get into reenacting or theater? 3. How much do you spend on your costumes and upkeep? 4. Is there a reason you don't talk during your videos? 5. Did you build the cabin you guys use and is it close to where you live? 5. Did you plan on making an ASMR channel? Haha. (The most I ever saw you talk was when you complained to Mish-Mish about having to spend 2 hours stirring to prepare a cake) Please don't feel like you need to answer all of these, I just wanted to throw them out there. Keep up the great work You guys are awesome. I always look forward to your relaxing videos.

After watching this, my first thought with the fried vegetables and beef broth....thats a hardy stew. As she continued, I realized this soup was probably a fine meal in 1830. Good video, makes me want a slower life with meaning.

I have a huge cauldroon but I put candy in it. Goodies lots of goodies. I made stew kinda like you do yesterday. I put a little beer in it too. So good. Only veggies are left. If I was rich I would come and visit help the 1790 home. Id buy me a new home. Mine is in the 100th cenrury and my car too. Lol love you two so much

I wonder why were the original veggies and broth separated from each other? If I were cooking I would have left them all together as a terrific meal.

When you’re making a broth, it’s very common to toss out the vegetables used when simmering it. You’ve usually cooked out all the flavor into the broth and all that’s left is mushy glop. You add fresh at the end and cook it for a much shorter time, maybe an hour instead of 5-6 or more, so they still have flavor and some solidity.
