INGREDIENTS:
- 1 large cauliflower head
- salt
- black pepper
- 4 oz / 112g cream cheese
- ½ cup / 120 ml heavy whipping cream
- 4 strips of bacon (preferably, thick cut)
- 1 tbsp onion powder
- 1 tbsp garlic powder
- ¼ tsp paprika powder
- ¼ tsp cayenne pepper powder
- ½ / 120g shredded mozzarella cheese
- 2 cups / 480g shredded cheddar cheese
- 1 cup / 240g shredded cheddar cheese (for the topping)
- ½ cup Parmesan cheese
- ½ - 1 cup ground pork rinds (or use Pork Panko)

I love this recipe. Great taste. I love that you show all the steps and even the messes. It is what we all do. So many times try to drain something and spill or mix in a bowl to small but hate to dirty another one so we keep mixing. Guess that is what bench scrapers are for. This has got to be one of the funniest cooking videos I have seen. It showed me something new to do with cauliflower that I might actually enjoy - somehow faking mac & cheese doesn't bother me the way faking mashed potatoes does, what can I say I would rather do without potatoes than eat the cauliflower fake ones.
