Cauliflowers were on sale this week at $2 each and it had been a while since I'd made cauliflower soup. I love it because it's really easy to make, has simple ingredients and is the perfect lunch or dinner on a cold winters day, especially when served with toasted buttered crusty bread.
For this recipe you will need:
1 tbsp. Olive Oil
1 Onion, chopped
2 Garlic Cloves, crushed
1 Cauliflower Head, cut into florets
500 gm Potatoes (I recommend using a variety good for mashing)
1 litre Chicken Stock (you can use beef or vegetable if preferred)
125 ml Cream
Salt & Pepper to taste
Parsley to Serve *Optional
