For Spanish-speaking readers, one of the best titles out there is Joan B. Culla's "Brief History of Zionism" (Breve historia del sionismo). Culla is a history academic from Spain. I also recommend Michael Bar-Zohar's biography of David Ben-Gurion, Golda Meir's memoirs, Edward Said's Orientalism, and Shabtai Teveth's biography of Moshe Dayan.

The Arab-Israeli Conflict: A Guide for the Perplexed by Ian Bickerton. A bit outdated but it does a good job explaining both sides' views. He makes his own opinions known, but that makes the book engaging. He is a coauthor of a standard textbook on the conflict.
