Chả Giò Que Nướng Air Fryer/ Air Fryer Spring Rolls Stick
Lean ground pork: 200g
Spring rolls wrapper (frozen): 15 cut in half
2 (96g) Vietnamese sausage
8-10g dried wood ears mushroom, already shredded
1 med (100g) carrot
1/2 jicama (150g)
2 green onion, chop small
1 bunch (50g) glass vermicelli
1/2 tbsp minced garlic
Cornstarch mixture: 1-2 tbsp cornstarch with 1/2 cup water
Oil to cook
Marinate ground pork with ingredients below, mix well, and set aside
1/2 tsp chicken broth powder
1/4 tsp salt
1/2 tsp sugar
Black pepper to taste
1 tsp minced garlic
Added to filling pan at last: 1 tbsp each oyster sauce, soy sauce
Dipping sauce: sweet & sour sauce. Or mix mayonnaise with sriracha sauce, and some sweet & sour sauce
Soak Vietnamese sausages with water for easy to peel off the casing when it turned white. Dice to little cubes
Soak wood ears mushroom with water to soft, than chop small
Dice jicama, carrot to little cubes
Quick soak vermicelli in warm water, Immediately drain the water off when vermicelli just soft a bit, do not over soaked, cut to small as well
Heat the frying pan add oil, 1/2 tbsp minced garlic, saute to fragrance, than add chopped jicama, carrot and ground pork cook 3-5 minutes. My great technique to separate the ground meat is using 2 back to back of the spatulas chops while cooking, (see in the video) when meat no more pink than add cornstarch mixture, cook for 2 minutes to thicken the flour. Then add chopped wood ear mushroom. Along seasoning again with 1 tbsp each oyster sauce, soy sauce mix and taste to your liking. Then add chopped green onion, pepper to taste, last but not least chopped vermicelli, mix in and turn of the heat. Immediately remove the pan from heat don’t over cook the vermicelli too soggy, let cool than ready to wraps spring rolls
Wrap each spring rolls stick with 1 tsp filling and in 1/2 spring rolls sheet. Spread thick flour mixture on 3 sides to seal edges. Brush oil evenly on spring rolls stick, cook single layer in air fryer at 400°F/200°C for 10 minutes. My air fryer basket quite large so I only bake 2 batches and no need to flip, but feel free to flip half way for evenly crisp.
All done, enjoy! Dipping sauce at your choice or try the simple dipping sauce above
