Your english is good, but there is just ONE correction: Amomum tsaoko is known as "Black Cardamom", and I am unsure of whether nutmeg is a good substitute

@@danielpincus221 That it is not, but if Chinese Cooking Demystified is correct, subbing Indian Mustard Oil would be a good sub. That, or just doing Peanut oil
Thank you for excellent recipe! I will grow traditional Chinese chili varieties this year (二荆条, 朝天椒, 灯笼辣椒, 子弹头) so will have plenty of chili oil in the autumn. But I wonder if anyone can clarify one thing for me: 满天星干辣椒 is the same variety as 七星椒?
