Hi Anders. I made this cocktail last night and my wife was blown away. It has two "Wows!" - one is pulling the ice cream glasses out of the freezer and the other is producing the champagne as the finish to the drink. I used Drambuie to replace the Benedictine and the result was truly as delightful as you and your wife indicated. It became creamy as we drank it, as well. Without doubt the most amazing cocktail I have made for us. Thanks so much for introducing us to it.

I was just looking through the Savoy cocktail book (1930) last night, and took note of the Soyer Au Champagne cocktail. What the coincidence. The Savoy version is as follows: 1 liqueur glass vanilla ice cream (1 ounce, or two tablespoons), two dashes maraschino, two dashes curacao, and two dashes brandy. All of which stirred well in a medium sized glass, then filled with champagne. To which you add a slice of pineapple, or orange, one cherry, or strawberry. This recipe would be quite a bit frothier as the ice cream would have been melted, and fully incorporated. I think the cocktail would vary drastically depending on the size of your medium glass. As that would decide how much champagne the cocktail is topped with. I know that most typical cocktails, not topped with seltzer, champagne, ginger beer, or any other liquid, would typically be made with 3 ounces of liquid plus the water from dilution so most cocktail glasses were 4-5 ounces. I use 4.5 ounce cocktail glasses for these recipes. A medium glass? Well, I suppose I would use an Old Fashioned glass, or maybe a double rocks glass. Should I use a highball glass? In recipes like these the size of the glass does matter, as it decides the ratio of in this case base ingredients to champagne. We all ready know the amounts for everything, save the champagne as that relies on the size of the glass, and the remaining volume of it. Something to think about.

Thank you both for these videos! It’s been like having the bar I can’t go to for obvious safety reasons, brought into my home. Plus, I’ve learned so much! Anders is precisely the kind of bartender that I want at my regular happy hour joint, an Oz is an absolute delight as well. I feel her reactions to the drinks, are all of us sharing in these wonderful flavors & happiness. Since we can’t hang out physically, friends and I have an online happy hour one day each week. So we’ll watch your videos, try to find the spirits (if we don’t already have them), and try to make the cocktail on our own. It’s a nice time to reconnect, hang out, and share what we learned over Zoom, as we try to master the mixology, and we have even started creating our own custom variations, and exploring what snack food (or chocolate) pairs well with the drinks. Anyhow, all the experimentation has been super fun. I just want to say you’ve both been a godsend during the pandemic, so thank you again! Your attitude is really healthy, funny, and kind, and I’m digging the ride. Looking forward to see what you come up with next! 🙌🏻
