It's probably a lot of factors such as availability, timing and budget. I, for one, am super happy they got Temuera Morrison. He may be more expensive compared to a lot of them, but maybe cheaper than Mark Hamill, for instance.

I’m so glad they fixed Vader’s modulation to sound like how he talks in the Force Unleashed games. In the first game Matt Sloan sounded like he was just speaking in a British accent down a microphone and not like Vader at all.

It's a shame they didn't hire more of the movies' cast to voice their characters. Obviously I'm not expecting Ewan Mcgregor or Harrison Ford, but if they can get Daisy Ridley, Gwendolyne Christie and Billy Dee Williams then Hayden Christenson, Adam Driver, and Mark Hamill are all in the realm of possibility.

I play the game in latin spanish and its good to hear the voices i grew up with during the movies and clone wars, they are all the same voice actors, including the ones from the sequels, the only ones that they changed were luke's and clones voices
