Well the original Mario was done long before Paarthurnax. So it’s highly possibly his voice got deeper as he got older to be able to pull those off. Just my thoughts. If you listen closely you can hear the age in his voice with the dragon.

You do realize that Charles Martinet voices other characters within the Mario franchise, right? He's voiced not only Mario, but also Luigi, Wario, Waluigi, Toadsworth, Metal Mario, Shadow Mario, Piantas (Male), Mini-Mario Toys, Baby Mario, Baby Luigi and Baby Wario. When I heard he voiced a dragon, I was surprised that he decided to do that, but hearing it. I can actually hear Charles.

Hey, Charles Martinet is a pretty flexible guy. he has voiced many a character within the Mario Franchise and is pretty willing to do what is asked of him. I'm pretty sure when he was given the script for Super Mario 3D World, he was the only voice actor that, when they saw the fact that they were supposed to add "Meow" for their Flag line, that instead of saying, "What?" said "Okay".

Dee Bradley Baker has done a million and one voices, so comparing just two is crazy. Especially since every voice sounds completely different...not to mention the fact that he's done pretty much all the animal noises in everything (he does Perry the Platypus! I've watched a video of him doing it but it doesn't seem human; and that's just scratching the surface of the animal noises he does, it's incredible!).

Just had a thought. At what age can most people grasp obvious sarcasm? Like what is the percentage per year of age?
