I think it's higher cause u have the probes right on the grate. They might differ but I think ur temp would be lower all the way around if u wasn't right on the grate. More accurate readings

What thermometers are you using? I am getting sick and tired of having Char Griller continuously tell me "check back next month" when I ask them for availability of thermometers to fit the ports. I'll get something else because I'm sick of waiting for them to get some in. There is a tuning plate by Lavalock for the Brazos Old Country smoker which is almost identical to the Grand Champ. Should fit perfectly or with little modification.

I made another video showing flipping the grate in cooking chamber and drilling holes works great as a baffle plate. I bought Lavalock Guages on Amazon they work ok, just don't tighten while holding guage.
