Oh chef it was amazing, of course I watch you, I love everything African American as I'm originally from South Africa..you taught me macaroni cheese, corn bread,home made ice cream and fried chicken, I cook those even for my white English friends and they love them and this year I'm cooking YOUR turkey of course, I just love you to bits and God bless you and if I ever get a chance to come to new Orleans, I'll hope to taste the food with you. @@CharlieTheCookAndrews When I say my whole foot was in this dish. LOL -- delicious. I was not able able to get my roux as dark as yours without burning it. I also used Oat Flour so that may have been the reason. It really made sense to make the roux alone and just place it on the side. Also by only browning the chops for 1 minute allowed me to achieve my first juicy and tender chops. I thought it was too much seasoning but it melted down perfectly. My kids and husband loved the dish.

That chop must have been so tender and just wonderful...every recipe that I have followed from you has been all success! Wish you had your own restaurant...and your Gumbo recipe has been the BEST that I have ever had...EVER!!! Ive been to New Orleans and though there are fabulous cooks there, your gumbo recipe is just the ultimate thing. And your shrimp and grits is my all time favorite.. EXCELLENT! Your videos are valuable for beginning cooks, young and old. You are giving easy to follow instructions coupled with demonstrating how to chop, peel etc... and the importance of rinsing food, wearing gloves... you're amazing. Add to that the way you speak. Your videos remind me of Bob Ross, the guy who had the painting show and gave easy instructions in a soothing voice that made you think you could actually paint but even if you didn't paint, he was fun to watch and listen to. Mr. Charlie Andrews, I wondered about so many ingredients at the start of the video, but it's because you cooked 3 or 4 recipes depending on how you count the gravy. Wow. I can't wait to try the smothered pork chops and the potato salad done Louisiana style. Out of the park! And if the pork chops are as tender as I think they'll be, I'm going to try them with a completely different recipe. I live in south Texas and my favorite Tex-Mex restaurant has smothered pork chops to die for. I've failed in duplicating the recipe. I'm betting your method of cooking the chops will work wonderfully with a Tex-Mex roux too. It's just a different combination of spices. Wonderful video and cooking techniques. I'm learning a lot from you and enjoying your style of cooking and precise details for every step of each recipe. Aside: if the Tex-Mex recipe works, how do I explain to my family why I'm hitting my fist on the table with every bite? Ha!

Made this tonight or at least the Smothered Porkchops and it was a hit. I did use chicken broth instead of the water but it was excellent. Already was told to make it again and I plan on it. It was an easy dish too but I am an old hand at making a roux so did that and on with the recipe as you did. This is the 3rd recipe I have made of yours and each one has been a hit so I appreciate them and want to encourage others to make them also. Your smothered okra and shrimp and sausage is a new regular rotation of meals and that is rare. This is looking like another one. Many thanks for all you do and the videos. You are a gem.

But I must state that I like the idea of a pork chop roux,just like gumbo roux. Brother, you need your own show right along with cookbooks. :) Keep 'em comin and I pray that you remain successful.

Creole style pork chops are one of my favorite dishes. I am definitely going to try this method. In the past, I have finished cooking them in the oven instead of on top of the stove. I'm going to try these for a dinner party of about 12 people soon.

I have never seen a potato salad where the dressing contains hardboiled egg yolks. That sounds amazing. I am making some tonight. Also, I've never seen making corn with cooked onions. I'm going to try that soon.
