Galaktoboureko is a traditional Greek dessert made with layers of golden brown crispy phyllo, sprinkled with melted butter, filled with the most creamy custard and bathed in scented syrup. We baked our fantastic galaktoboureko in a metal pan measuring 25x35 cm. For the syrup we used A) 2 glasses of sugar 400 g, B) 1½ glasses of water 300 ml, C) 2 cinnamon sticks, D) 3-4 orange peels, E) a spoonful of lemon juice about 10 ml and G) a spoonful of honey about 30 g.
The other ingredients are A) 6 cups of milk (whole - cow or goat) 1500 ml, B) 4 medium eggs (about 60 g each), C) 3 tablespoons cornflour 60 g, D) 3 tablespoons semolina, coarse or thin, 45 g, E) 3 tablespoons of rice flour 60 g, G) 1-2 g of salt, H) 7 tablespoons of sugar about 140 g, I) 2 sachets of vanilla 10 g, I) about one tablespoon of orange zest, K) a total of 150 g cow butter, unsalted. I will also use a package of pastry crust sheet 500 g. It is special for galaktoboureko, baklava and others. #MEchatzimike
