Just deeper omelet info for anyone interested -The fatty sausage is actually Chinese sausage. And yes it has a lot of fat (thus why they so gud) - The Thai sausage's specific name would be Sour pork, the taste coming from it being slightly fermented. Normally eaten in Northern Thai cuisine. The specks of green are most likely green chili.
