Yes maybe the hygiene standards are not on par with other such places, But Whilst travelling throughout India and Nepal I ate a LOT of street food such as this, and I NEVER once got ill, Unlike when I was travelling throughout Vietnam/Malaysia eating their foods in an upmarket places I was Ill a couple of times. So don't always judge a book by its covers people.

RIZ YT use less water, and constantly keep stirring while rice is boiling. For new harvest the rice contains more water so cook it with less water.

I dont thnk cook with less water is option.We in india crop n produce high quality rice n mOstly consumeD by every house hold. The less quality rice also produced heavily but mostly turned Into rice floor N consumed instead of cooking directly

In the Philippines they call it unli (unlimited) rice for additional prices for your meal as compared to single serving. Besides, you get a "Free Sabaw" (soup) for every meal purchased. As of today year 2020, these street food vendors are getting busted by the MMDA for using the street corners, sidewalks for blocking pedestrians and or motorists making it difficult for traffic to move freely in the metro area.

Maybe they are serving a cheaper quality of rice and yes, notice the serving of viands, lesser portions. One more thing check their customers mostly they are doing manual jobs where they need loads of carbs..

In general south Indian meals served like rice with spicy chutney, curry, fry (3 to 4 items). Once finished with them, again they will offer rice(less quantity) n 2 or 3 types of stews with. final round is rice( if needed) n curd/buttermilk to finish. This is casual process even in big functions or in home also same process. Only difference in home 1 pickle, 1 curry or fry n 1 stew n curd is same. Do on the reason but do not get bored at all.
