As a result of a recent Cease & Desist letter that I received from the Consorzio per la Tutela del Formaggio Grana Padano, I have re-edited and uploaded this video for a grainy style Italian cheese that shall not be named. I have called it Chease & Desist Style Cheese.

Oh you can't call anything that's not actual liquid milk, milk. Apparently plant based milks can't be called milks either so, milk must be the juice squeezed out of the udders of a mammal, fresh and unaltered, but pasteurized or satan himself climbs up onto the surface of the earth and opens the gates to hell to allow all the demons and sinners out. Fresh and raw cow's milk is a complete nono according to government.

@@TheFloatingSheep It's actually funny how regulated stuff is. Cheese is regulated, but then indeed so are milk, fruits (and the juice you can make from them), grains/cereals and the bread you can make from them, wine, chocolate, eggs... and my favorite on that list: soups. I wouldn't believe it had I not read it myself, but "tomato soup with meatballs" is entirely proscribed as to how many balls, how much meat, how much tomato, etcetera. It's crazy.

@@mfhulskemper In the US all food/drink items are required to carry an expiration date including water. In some states water is required to have an expiration date no more than 1 year after it's packaging date. This applies to glass bottles as well and is not related to the chance of plastic leaching into the water.

Yes, quite true, if you stir clockwise with a metal ladle in the southern hemisphere then there will be electromagnetic coupling with the Earth's rotating magnetic field which will generate a great deal of static electric charge and eventually cause you to shoot lightning bolts out of your fanny and bystanders would loudly exclaim:- "He's cutting the cheese again!!!". This works best in south Australia which is further away from the Equator plus it's very dry so the electric charge does not leak away before you can shoot your lightning bolt. 😁

it's because Italian food in general is the most faked food in the world. Everyone is trying food claiming it's Italian when it's not, that's why we're protecting out food products like other companies protect their trademarks and products.

Cheddar is a type of cheese, whereas Grana Padano (and Parmigiano-Reggiano for that matter) are kind of "brand names" (protected designationof origin, or PDO) for cheeses made in a specific region of Italy, but the cheese type is Parmesan (which, retardedly enough, is still a PDO, but as far as I understand it a less protected one?). And it makes sense for local producers to be able to sell a specific, world-renown product under their own name with the consumer being able to verify the quality and origin just from the name. I suspect the law wasn't meant to punish people talking about those products or really anyone who's not actually selling it, but unfortunately this is what you get when you have tens of thousands of European clerks who have to justify the existence of their jobs.

@@amunak_ True Cheddar is a very nice cheese but it was not protected because it was already a generic product name at the time. A version exists with PDO status, I think the name is West Farmhouse Cheddar or something. It is a very beautiful cheese, produced with raw milk and natural rennet and comes in aged varieties as well.

I hope you know that PDOs are very far from being the Big Cheese corporation that everyone here seems to think it is. PDOs are gathering of small producers who are trying to protect their product against the unfair competition created by supermarket brands that can afford to produce cheaper due to: -relocating the workforce -buying products in bulk -pressuring raw material producers into selling cheaper or lose business -using lower quality raw materials Some of the producers of the consortium may produce only a few hundred pieces a year, some may produce several thousands a month. Some will be family owned businesses with no outside employees, some will be on a larger scale, etc Trademarking their name not only protects them but also protects the customers. When you buy a Grana Padano, you know that you're buying the real thing, not a cheap industrial copy. As a cheese lover, i wish Gavin did some more research about it because PDOs are protecting everything he loves: tasty quality products made with passion. Gavin often compares his own cheese to the industrial cheese found in supermarkets which he always finds much less tasty but then he gets mad when PDOs are trying to protect their quality product from copied by 3rd parties that may not have the same standards of quality. Their lawyer is not a cheese producer, he is just a lawyer doing lawyer things. He sees a video called "making Grana Padano", he sends his letter because it's his job. It was clumsy and stupid but then again, he is a lawyer. He most likely did not watch the video, it would cost him his precious lawyer time. It's highly likely that just once a year, he just types "Grana Padano" in youtube, checks the title of videos that use the name without authorization and then mass send his cease and desist emails.

@@cedric7751 I agree that PDO's are essential for small producers to operate. I think like you said the lawyer probably acted without really taking the time to watch Gavins videos. Honestly speaking, I've learned about cheeses I've never heard of before on Gavins channel and I sought out cheeses to buy that I never would have had I not seen it on this channel. In a way, this channel is basically free marketing for these cheeses.

Dude.... with what all your family and all the rest of us have been through this year. Wouldn't it be such a catharsis if you and your family were to take a trip to Europe as soon as that's possible again and explore all the great cheese making places there. Not only visit one of the [chease and desist] regions but maybe visit the Alps and learn about Alpine Transhumance and its influence on cheese making in the Alpine region. The cheese that won't be named is probably not gonna pay for your trip.... but what an opportunity to do an epic travel and vlog series! I'd sooooo watch that.

Very good cheesmaker information. Whatever they think this is not a secret. Making food is of all our interest. And this is it. i remember making goat cheese in my youth, the thought of me saying i am making goat cheese, and i happen to mention in norway they mention this style of cheese as "brunost"... I have meny examples because i did not only do "reduced cheeses". but also white goat cheese, which is my favourite as a compliment to baked potatoes. that said brown sheeps cheese is also amazing as a side dish in a baked potatoe to fish or venison filet. That said if you have not tried a reduced cheese like brunost, for me the origin is "gudbrandsdalen" in norway. this is the most famous "brunost" in the nordic region. I know that my family made this from early 1800 or earlier. I have no proof for this, so this is a disclaimer. My grandfather told me this, how he a a "goat boy" in around 1917 herded goats. it was very common in that area when familys hade many children. we are now talking 10+ in my grandfathers case 13+. He also told me that his great grandfather learned this kind of cheese, which to be honset in those days were quite common. He was very good with family origins research so i think i can find out who the great grandfater was. I want in no way want to debunk the claims of "tine". just want to mention what i have learnt on my life. If i forget this and maybe my father also 80+ this might be forgotten. Tine may take the cred i dont care. just saying that there are more history to this. I have no cred at all. Anyhow, i ranted a bit there, i got a bit re energized by the start of this post. Thanks Gavin for great videos. I would love to see a "brunost" style video. or also simply a aged white goatcheese. 11+ months. Nordic style. I remember in my youth how i ate white short aged goat cheese as a flavour enhancer on alot of things.

This looks fantastic! You really know what you’re doing and make the process seem less intimidating to a novice like me. I’m new to the channel and I love the way you handled the situation with humor, but I’m surprised they didn’t initially handle things more considerately in the first place on their end...

I was just reading up about making cheese as I'm trying to find a new hobby during this Covid BS. Coming across this video and the other explanation video about what happened 100% convinced me to pick up cheese making. If there is something that I love more then making stuff from scratch, it's to stick it to the man. Rebuilding a fridge may take me a while but as soon as I do, I'm making this cheese!
