The example is nothing with being intuitive at all. On the contrary, it is completely quantitative.

what about the probability of getting 2,3,4, and5? why do you only take the prob of 1 and 6? 2:58

Maybe someone else is wondering about the same thing. 1. We can do it since we're taking out only non-negative numbers. 2. We do it, since only P(x=1) and P(x=6) are useful in showing the contradiction - look at the assumption we made.

See video 1 - where he started with a dice with mean of 3.5 and var of 25/8 - and applied Chebychev's inequality to the constant 2.5 (i.e. |x-mu,| > 2.5 - he could have chosen other values, but that was just a value for demonstration) to show that it's last than 0.5 - in this part he assumes that Chebychev's inequality is false, and so it's greater than 0.5, and reaches a contradiction.
