Lava Cheese Tarts 2 cups all purpose flour ½ cup powdered sugar pinch of salt ¾ cup cold unsalted butter in cubes 2 egg yolks 1 cup cream cheese ¼ cup white cheddar 1 tbsp salted butter 1 tbsp lemon juice 1 ½ tbsp cornstarch zest of half a lemon 1 large egg ½ tsp vanilla extract ¼ cup powdered sugar Add flour, powdered sugar, salt, butter to bowl. Cut up butter until mixture resembles wet sand. Add two eggs yolks and mix with other ingredients. If dough is too crumbly, add ice water one tsp at a time. Assemble dough into square shape. Wrap dough in plastic wrap and refrigerate for 30 minutes. Make the cheese filling. Add cream cheese, cheddar, butter to pot. Cook until cheese has melted. Add the following items and stir after each addition: lemon juice, cornstarch, lemon zest, egg, vanilla extract, and powdered extract. Let cool completely, then refrigerate for four hours or one day. Roll out dough on a well-floured surface a quarter of an inch thick. Cut out dough to fit your muffin pan mold. Make sure that the dough covers the sides of the mold, cut out the excess. Poke the bottom of the crust with a fork, the refrigerate for 15 minutes. Blind bake the crust with dry beans or rice placed on top of the crust in muffin shells for ten minutes. Remove the shells and bake for another six minutes. Fold in 1/3 cup whipped heavy cream to the chilled cheese mixture. Brush the crust with egg whites. Spoon cheese mixture into the prepared crusts. Brush a thin layer of egg wash on top of the cheese mixture. Bake at 380 degrees for seven minutes.

Roll out dough on a well-floured surface cut out dough to fit your pie mold. Poke the bottom of the crust with a fork. Then refrigerate for 15 minutes.blind bake for 10 minutes. Take out the parchment and bake for another 6 minutes. Brush the crust with egg whites bake at 380 F for 7 minutes

Hi dear Yummy, i'm a huge fan of these cheese tarts, i was lucky enough to taste them in Japan, they're delicious. The only small thing i miss in your recipe is a european equivalent of your english metrics...cup, teaspoon, it's not very clear for a non US/UK person ....Here scales are in kg or gramme, but never in " tbsp" .

Hi! Best to not leave the batter in the tart unbaked or you'll have a soggy tart. Once baked, these should be served while still warm or chilled until ready to serve. Thanks for visiting and watching our videos. 😊

Hi! If you have a block of a butter which is around 225 grams or 1 cup, divide it evenly into 4 and just use 3 of the portions. It should be around 169 grams or around 6 ounces. Good luck! Thanks for visiting and watching our videos. 🥰

Hello! Yes, you can or you can substitute the lemon juice with a lesser amount of calamansi juice instead to give it a stronger tang than the subtle tang that cream cheese provides. Hope this is helpful. Thanks for visiting the channel and watching our videos. 🥰

Tried this recipe today and it was a total fail. :( the cream cheese didn't melt like how it looked like in the video. And the final product tasted more like a lemony cheese tart.
