So it looks like Cream cheese Marscapone? Sour cream Heavy cream Sugar Eggs Flour - flavour matcha or cocoa Mix And then the secret is the emersion blender before the pour!! That really emulsifies everything together into an extra creamy state! Bake in water, cool then freeze if desired until used. Let me know if I missed anything!

I think the chewiness could be tapioca starch or glutinous rice flour….maybe I’m wrong but it sort of makes sense. The machine they put it in to homogenize the batter confused me….not sure what that is!

I think the machine is like a blender, they blend it in to make sure the batter is lumpfree and silky smooth…also i think the recipe is similar to basque burnt cheesecake 😊

I see lots of unnecessary operations in these videos. Why do you waste working time on breaking whole eggs instead of using bottled eggs? Why do you pour cheesecake dough from a bowl, then clean the molds instead of using a pastry bag? Such a waste of time and products! Looks highly unprofessional to me
