I believe it's chicken stock or Yard Trick juice as he calls it. No water. You'll get water from the steaming meats anyway. Stock keeps it liquid.

Outside of Tradition, i'd say noodles are better than rice in alot of ways, superficially, eating Jumbalaya wit undercooked rice, even slightly undercooked, feels like eating a bag of beads, but undercooked pasta is only just chewy. Plus Pastalaya is always best cheesy, which makes the sauce more like a paste, giving the mouth feel of a fuller meal compared to a soup or stew which Jumbalaya is, even though they offer the same nutrition

I guess what i wanna say to Pastalaya haters is, it was made with rice because we were poor, not because it's the best all time ingredient to prepare the dish, it was a one pot struggle meal, sausage rice and beans, not a branded recipe, There are 100s of one pot meals, Jambalaya stuck because it sounded fun and stereotypes clung their claws in with po boys, gumbo, and bubba gump.
