Cheesy Chicken Quesadilla Recipe - (Full Recipe Below)
The long awaited and overdue weekend classic is here! I'm not a super fan of a normal cheesy quesadilla. They are just kinda boring in my opinion. Why not amp up the flavors and do the name 'Quesadilla' some justice?! This cheesy chicken quesadilla is a KNOCKOUT on the flavor scale. I know you will love it!

Cheesy Chicken Quesadilla Recipe
| Ingredients |
2 Boneless Skinless Chicken Breasts
1 Heaping Teaspoon Chilli Powder
½ Teaspoon Ground Cumin
½ Teaspoon Paprika
½ Teaspoon Garlic Powder
½ Teaspoon Oregano
½ Cup Tomato Sauce
1/3 Cup Chicken Stock
1 Medium Onion, Sliced
1 Jalapeno, Diced and seeds removed
1 Cup Shredded Cheddar Cheese
1 Cup Shredded Mozzarella Cheese
2-3 Large Flour Tortillas
Salt and Pepper to Taste
2 Tablespoon Coconut Oil, Seperated
Avocado Sauce
2 Ripe Avocados, Pitted
2 Tablespoons Fresh Parsley or Cilantro
Juice of Half a Lime
2 Tablespoons Sour Cream
Salt and Pepper to Taste
| Instructions |
Diced chicken breasts to about 1/2 inch cubes. Season with salt, pepper, and dry seasonings. Mix to even coat.
In a non stick skillet over medium high heat, add oil and seasoned chicken. Cook chicken until almost done. Once the chicken is about done, add chicken stock and tomato sauce. Continue cooking until sauce reduces. Once cooked, remove from pan and set aside.
In the same pan over medium high heat, add coconut oil, onion and jalapeno. Cook until onion is soft and translucent. Remove from pan and set aside.
Assembly:
Brush outside of tortillas with coconut oil. Fill with chicken, onion mixture, both cheeses, and top with tortilla.
In a nonstick pan over medium heat, gently cook quesadillas on both sides until golden and slightly crispy.

Add all ingredients to a food processor and blend until smooth and creamy.
