Ramsay got famous because he figured out Americans want to watch drama no matter what the pretext. Have you seen the original British Kitchen Nightmares? It's NOTHING like the ones with him screaming at mfers in the US.

Sure the Americans JUST focused on the drama and amped it up through editing, but in the dramatic moments of the British version, Ramsay is the same; as insulting, as abrasive... that's just him and how he critiques and deals with people. And his 'Ramsay's Boiling Point' is the best exmaple of this, 10 x more brutal and 'dramatic' than any Kitchen Nightmares episode, bc of how genuinely dark he is, grabbing his staff and just pure abusing them. And that was him running his restaurant for real. So, this idea it's some persona for TV is nonsense.

Chef Jean Pierre has not changed in his humor and style. I can close my eyes and listen to him and think it’s a current video of his iconic cooking. I love all of his videos and cooked several of his recipes.

It take away the humanity for something contrived it plays on manipulated perception than actual reality. I appreciate the genuine pomp and circumstance of the real deal not high tech chicanery

You have no idea how many of us want these old eps. He learned a lot since this show. "Seal in the juices" oh, pishaw, chef jp! Oil doesnt stop butter from burning and he's ao scared to throw the fat ingredients at the food on camera lol Im glad we learned from the retired JP. He's our culinary hero. Thank you for bringing these to us!

This was the time when fat and butter was seen as the culprit to everything bad though.... So I'm sure he added the butter to his dishes in the restaurant just like he does on his YT channel today, but this TV show likely wanted show the popular lean way of cooking. I winced a bit when he didn't let the steak rest before cutting into it....also he could've given a bit more "maillard" reaction when searing it.

@@nikoliesto9348 he was in a hurry for the filming, so i can see why those were overlooked... but also to your point, modern JP woulda at least mentioned alternatives. I'd loke to point out that he has lamented that in the late 80s, after the hit pieces against butter circulated, every customer demanded he back off of the butter in his dishes. So, he did indeed have to make those changes jn his restaurant. 20 years after this was filmed Time finally released their "eat butter" article which he would have framed if he didnt want to reread it over and over. You can tell how much it made him feel better to know that butter was not only back, but could be healthier than any other cooking fat! Take it from JP: Life is a journey filled with learning and changes. Roll with it and keep on your path. Things will work out.

This is pure gold. I discovered Chef Jean-Pierre a little more than a year ago when one of his videos appeared in my YT feed. I've been hooked ever since. I had no idea this show existed from 30 years ago. It holds up extremely well. One need only close their eyes and you'd swear this was one of his current videos - his voice still sounds the same! And the the music is great - it gets your attention and draws you in.

The wonderful thing about Chef JP is that, if you are serious about food, he teaches you technique that you would only learn about at a top culinary instructional institution. I always was told I was a good cook but after the Covid period with Chef JP I have elevated my cooking to a whole new level. Fantastic if I’m cooking for myself, or for others. Such great passion he has for cooking.

Loved seeing this! Made the mushrooms and the potatoes tonight to go along with a ribeye. Used Chef JP’s fig balsamic vinegar for the mushrooms and OMG, so amazingly good., Love seeing him back we were all in our prime.

Mind is blown. I've been watching JP's channel here for years now, and only now am I realizing he's the same guy I barely remember from flipping through (and sadly never really stopping) channels as a teen. It's interesting that 30 more years of being in a mostly English-speaking context has mellowed the Italian aspects of his accent, making his French side stand out much more now than back then. (Though he still says "par-suh-lee" the same now, thank God! LOL!) Did anybody catch his concession to 90s fears of fat? You'd never hear him say to leave out the butter today!

For those who don't know, Chef Jean-Pierre has a great KZbin channel. I think he posts a few times a week. This is the first time I have seen his pbs show. He talks about it sometimes. He started the channel because his cooking school was shut down because of covid and now he has a few million subs.
