Made 2 zucchini "bread" pans on 6/20/2023 according to Chef John's recipe and both turned out GREAT in spite of the fact that I was talking to my daughter on the phone and got sidetracked with the melted butter in the microwave. I had already put the bread in the oven when I realized I left out the butter; but I stirred it into the batter freely measuring the amount. Thanks so much Chef John!

You can pan sauté sliced leftover zucchini in a little oil. Add a little soy sauce and eat it with white rice and maybe some kimchi on the side

My grandmother used to make zucchini bread all the time, I love this stuff! To be honest, I did prefer it warm. I also used to spread some butter on it while it was still warm and let it soak in and devour it in less than seconds 😂

Back in the late 70s, I was served chocolate chip zucchini bread and my life was changed forever. It was moist and chocolatey with that zucchini greenness...just perfect! So I ALWAYS recommend adding chocolate chips and leaving out the nuts!

I keep my zucchini in the freezer until after Thanksgiving. I like to bake my zucchini bread in wide mouth pint mason jars and put lids on them as soon as they come out of the oven so they seal as they cool down. It's a great way to package a homemade edible Christmas gift. If you give it a try, spray the inside of your jars with non-stick cooking spray and don't fill them more than half full. They have to be wide mouth jars or you'll never get the bread out of the jar in one piece.

I made this today with added walnuts and shredded carrot to make it look more festive. I regret that I didn't have cayenne pepper. Also, I was worried that it would be too sweet, so I cut down on the sugar in the first loaf and added salt. It was delicious. Very easy to make. I added the rest of the sugar (in proportion) to the second loaf. Still waiting for it to finish baking.

You really should try that with some cream cheese frosting - just cream cheese and some powdered sugar - like we do in Denmark! But of course that's up to you... you are after all the Selma and Louise of your frosting cream cheese.

Love zucchini bread! My grandmother used to bake loaf after loaf in the late summer when zucchini were taking over the garden and freeze them. We didn't refrigerate our butter and I have very fond memories of slathering a thick layer of soft butter on a slice of this bread and loving it.

Pumpkin spice is a scourge on humanity. Last year a coffee shop tried to kill me by making my caramel chocolate coffee a pumpkin spice chocolate thing. I'm using hyperbole, but I'm sure you get the point. I'm fine with pumpkin bread/bars/pie but leave that spice out if everything else.

Yum! The zucchini makes the bread moist. When I was a kid, my mother used to trick us by making zucchini pie and calling it apple. Had all those yummy apple pie spices and we didn't know the difference......till she told us when we got older.

Zucchini is incredible. Great way to make sweet bread healthy and tasty. Zucchini bread is hands down, my favorite way to use zucchini. Zucchini brownies are a close second.

I LOVE zucchini bread! But I'm gonna stick to my own recipe that omits the nuts, I've perfected it to my own tastes and I simply can't give it up. It's so, so good. Also, fun food fact: that bitterness you mentioned is due to a chemical called _cucurbitacin._ And yes, it's mostly found in cucumbers, where it gets its name. That same compound is why you tend to get a tummyache if you eat too much raw cucumber or zucchini, and even watermelon.

I'll answer anyway: I caramelize grated zucchini and then freeze them in portions. They reduce a lot and don't take any space in the freezer. Great for adding vegetables to anything really: pasta, quiches, omelettes etc. Last week I added them to Chef John's garlic noodles recipe for some vegs.

I'm not a big zucchini fan but I LOVE zucchini bread!! Or grilled! Something I do with any sweet bread is sugar my pan (instead of flour) I'll use granulated sugar on the bottom and raw sugar on the top before baking. 😋😋😋

One of my favorite summer bakes. I have a friend who can't eat nuts but can eat seeds (there are many people with colon problem who can't). I was just sitting here wondering how pepitas (pumpkin seeds) would do? I think I'm going to try that the next time I make it. I think it would look pretty too.
