Chef Suresh Pillai from Kollam, Kerala is one of the renowned Chef who is world famous for his seafood delicacies. Easy to make, yet flavourful fish recipes are born from his brain and executed via his hands to the whole world. One such dish is Venad Paal Konju, made of prawns within just 3-4 minutes. Shallow fried in coconut oil with very few ingredients and then dry roasted in thick coconut milk and curry leaves makes this dish a unique one. Maintaining the softness and juiciness of the prawns is tha main challenge in cooking this dish. But I can assure that I have made 100% justice to his recipe.
