IF you're looking to reduce acidity levels further than what has been featured here, you can reduce the amount of onions and garlic added, as well as add more sugar. If you're trying to avoid sugar though, you can opt to use baking soda which will alternatively lower the acidity factors. Also perhaps hold off on adding any wine. Experimentation is strongly encouraged, however in doing so - taste may be sacrificed. It is advisable to use the type and amount of ingredients as featured by Chef Steve if you're trying to directly replicate the entree featured in this video.

Thank you MomC! :) Yes for pasta, pizza, as a dip for chicken tenders or wings, was a very nice sauce. One small regret I later realized, I should have went with 5 cans of puree instead of 4. I would suggest using 5 cans based on the amount of garlic and onions we used. Otherwise it did hit the spot, far better than most of the jar brands.
