Kolkata Kathi Roll
The very famous Kolkata Chicken Kathi Roll is what you can make at home!

Ingredients for Kolkata Kathi roll
For chicken marination
• 250 GMS Chicken leg boneless
• Salt to taste
• 1/2 tsp black salt
• 1 tbsp Ginger garlic paste
• 1 tsp green chilly paste
• 1 tsp Coriander powder
• 1 tsp garam masala powder
• 1 tsp red chilly powder
• 1 tsp turmeric
• 6 to 7 tsp curd
• 1 tbsp mustard oil
For Kathi Roll mixture
• Sliced onion Julienne
• Sliced capsicum julienne
• Coriander chutney ( coriander, mint, garlic, jeera, green chilly, salt, lemon juice )
• Tomato ketchup
For Paratha
• 1 cup maida
• 1 tbsp cup sooji
• 3 tsp ghee
• Salt to taste
• 1 pinch Sugar
• water to knead the dough
• Oil
Egg mixture
• 1 egg
• 1 tsp salt
• 1 tsp red chili powder
• 1 pinch chopped coriander
For garnishing
• Laccha onion
Method
• Cut boneless chicken into neat dices, marinate chicken with mustard oil, turmeric, red chili powder, black salt, salt, ginger garlic, and green chili paste, garam masala, curd.
• Marinate the chicken for 4 to 5 hour
• Heat more mustard oil in a pan and cook the marinated chicken.
• Then cut the cooked chicken into slices.
• In the same pan saute onion, capsicum, cabbage, tomato ketchup, green chutney, garam masala, and sliced chicken.
For the dough.
• Mix sooji, salt, and sugar and flour in a bowl
• Rub ghee to achieve sand consistency
• Add water and oil knead the dough
• Rest the dough for 15 minutes.
• Divide the dough into four equal portions
• Roll the dough using the rolling pin.
• Heat Tawa and half are done the paratha.

• Remove paratha from the pan spread tomato ketchup, green chutney, place the chicken mixture in the center of the paratha Roll the Paratha and put into a Tawa add some oil and cook to seal the edges and make it crispy.
• Cut the Kolkata Kathi roll and serve with Laccha onion
