I just followed everything only thing is I cooked for 1.5 hrs covered at 180 degrees but just veggies didn’t get cooked so I am adding another half hour (30 min) covered, lid opened and cooked for 30 min it came up so well . So 2 hrs with closed at 180 degree and 30 min at 200 degree wth open lid is my cooking time. Thanks chef keep adding more videos

Thanks for this recipe, I have marinated it and going to cook it after work tomorrow . Only difference being I plan to cook on charcoal and maybe have some Oakwood for that smoky flavour. I am not sure about the last part but will see at the time 🤞🏽

I have smoked it for 3 and half hours to have medium, internal temperature at 145 degree. It cooked well. Juicy inside even though I forgot to add some broth or water like you did. I feel I did not marinate long enough overnight like you said but still came out soft. Now my question is what if we sear it outside first and then cook? Did you cook it in oven or grill. That is very important to mention because oozing can be oven, grill, smoker or instant pot. Regards.

Whenever the meat is lamb, chicken or fish, you could look at Indian recipes. There are several methods of preparing it. As you are from Trinidad, if you want a spicy dry dish, you could also look for- Lamb (or Mutton) Burrah (Also spelled Burra or Barra) If you want a spicy gravy dish- Laal Maans (Literally, 'red meat', due to the red chillies used in it, from the Indian state of Rajasthan) We have several local dishes known only to mums as well 😋 I learnt a few of them during lockdown. :)

Please don't worry at all if you can't find raw papaya. It help tenderise the meat better. You can skip it altogether. If you have a raw papaya , blend and marinate.

Let the lamb rest for atleast 15 minutes for tenderness. You can serve it without vegetables and the gravy. Just collect and seive the juices (lamb) and mix in a know of butter and seasoning for sauce to go with your lamb 🙏

It will depend on the weight of the joint. Normally 1 kg takes upto 40-50 minutes to cook in pressure cooker. Cooking a leg of lamb is best when roasting in oven. But by all means you can pick up method of your choice 🙏

Thank you for your compliments. Yes you can leave the vegetables in oven for the whole time. Because it is cooking on a much lower temperature, they won't be ruined. You could see my vegetables. They come perfect every time. Just don't slice them too thin 🙂

@@addy6861 yes please. If you want to cut them thin then an hour max will be enough for them to cook. I would get the lef of lamb out an hour before the finishing time and scatter the vegetable around so that they soak up all the juice while getting cooked 👍🏾
