Latkes (Yiddish: לאַטקע) are traditionally eaten by Jews during the Hanukkah festival. The oil for cooking the latkes is symbolic of the oil from the Hanukkah story that kept the Second Temple of ancient Israel lit with a long-lasting flame that is celebrated as a miracle. Despite the popularity of latkes and tradition of eating them during Hanukkah, they are hard to come by in stores or restaurants in Israel, having been largely replaced by the Hanukkah doughnut due to local economic factors, convenience and the influence of trade unions.
The word "latke" itself is derived (via Yiddish) from the Russian/Ukrainian word латка meaning "patch." The word לביבה leviva, the Hebrew name for latke, has its origins in the Book of Samuel's description of the story of Amnon and Tamar.[8] Some interpreters have noted that the homonym לב levav means "heart," and the verbal form of l-v-v occurs in the Song of Songs as well.
Latkes need not necessarily be made from potatoes. Numerous modern recipes call for the addition of ingredients such as onions and carrots. Prior to the introduction of the potato to the Old World, latkes were, and in some places still are, made from a variety of other vegetables, cheeses, legumes, or starches, depending on the available local ingredients and foodways of the various places where Jews lived.
You will need:
10 pounds russet potatoes
6 large yellow onions
12 eggs
2 cups matzo meal
1 tablespoon baking powder
1/4 cup kosher salt
1 teaspoon lemon juice
peanut oil

Chef Bart! The top performing video on my channel is my latkes tutorial (even in summertime) and I think it's because tons of traffic is coming from your video to mine. Glad I finally got to the bottom of this in my analytics, and found my way to your channel! My love of latkes were the reason I started cooking on KZbin -- so many of my young "mommy friends" were afraid to try making them, so I filmed it. Glad you love them as much as I do! I make an easy version for a smaller family. Oster blender recipe with 3C potato, 2 T flour, 1/2 onion, 1/2 tsp. baking powder and 2 eggs. I don't use that much oil. They come out amazing. Irish style.

I was watching some paint dry, but waiting for that timer to go off was way more exciting and you could hardly notice that it was fast forwarded. So much so, that I couldn't resist smashing my head into my newly painted wall.

I'm not sure of the unpeeled potato part and will have to try it that way. My mix has a bit of garlic added to it so the onions don't get lonely. I love latkes.

Very nice. I've seen many recipes for latkes. We make ours with flour instead of matzo. Anyway, hope you take a look sometime. Your recipe looks delicious!

I am used to hand grating the potatoes - those long strings aren't how my mom made them - she's from Lithuania. BUT my hands are getting too weak to hand grate so much figure out a blender-way. Oy vey! My mom also added maybe a teaspoon of white vinegar to the potatoes and they stayed white! An egg, grated onion, some flour, salt/pepper, and have never ever heard complaints from anyone eating my latkes. I love them with sour cream, sometimes with applesauce, and love them cold the next day!

Why do you dump water from potatoes?)))) We always did them with liquid, and they fry just fine, but taste soooo much better, much more tender!!! But they need for this to be grated fine or in food processor.

If you grate the onions alternating with potatoes they will stay white

Weird ingredient ... lemon Juice???? This is the first I've heard of this. I'm Mexican and 76 years old but I would NEVER think of adding cilantro to the mix. That would also be weird. So many versions but Jewish latkes is the version I love the most.

My Father was born in 1923. He worked on a farm when he was young. Till the day he died at 91 he would no way no how eat a potato skin. His reason why...the farm he worked on would use pig shit as a fertilizer on the potatoes. Yummy!

He uses a lot of salt and a lot of onions - for sure! NOT a true Jewish recipe. I used two large frying pans - and by the time I finished all that I made, my family/friends ate everything - and I got all the rest! Yea!! AND I love my latkes cold the next day with a little salt - or sugar. Depends. I hand grate potatoes and onion - but hands are getting arthritic so will have to figure out if some sort of blender will give me the consistency I like. BUT try this fella's recipe - and you can always fix what you don't like - just like any other recipe.

way too many onions, put lemonjuice to your potatoes and some eggs, add matzoh meal ,salt and you get the best potato ltkes.

YUK! He did that? I stopped watching after he said he added LEMON JUICE, never mind that later he added matzo meal instead of flour. I think he's thinking it makes it more Jewish but Jewish versions never use matzo. I like the Jewish versions better and not the novelty versions like this.

If you think about it, everyone does it! He just happened to get caught. I'm going to bet that your friend's house that you went to 4 supper also double dipped in something, you just don't know. They could drink straight from the bottle that they offered you a drink from. You never know!😝😨
