Can't believe I am saying this but I believe that Uncle Roger really turned the tables around because if it wasn't for that collab vid, there wouldn't be as much awareness/curiosity generated regarding Laotian cuisine. That Laotian chef he did the collab with is really energetic.

Plus I think we should all try each others food... we can still all retain traditional recipes while making new ones with what we learn from other types of cuisine. Food, like ideas, shouldn't be culture-dependent imho. We all eat!

Nigel Ng has successfully created this character where he can basically say/imply whatever tf he wants and use his influence to collaborate with whoever and get out of any trouble or "cancelling" he might experience from it. tbh I love the jokes. I know a lot of people, hell maybe even a majority can't really handle jokes that might make them uncomfortable anymore. but what makes it great is that at the end of the day, I know, you know, Nigel knows that literally every country on earth has some great food and interesting culture. Looking at those stereotypes and joking about ourselves and others honestly humanizes us a lot. I admit 99% of what I know about Laos is through Kahn from King of the Hill, but it seems like a country with a lot of underrated food.

Very good video. Good respresentation of Laos food. It looks delicious and its just simple to make. Chef should make this at home or maybe even like do a cooking video for it. maybe we can bring a Laos food expert. it would be cool Honestly its so fun for Uncle to do this. cuz it keeps us interested in other food cultures too. Nigel planned this very well and executed it nicely too. It seems to be the part of the whole plan. He makes a controvery, a popular chef defends it and challenges them and Ends up doing a collab. So I heard from a lot of travel channels that Beer Lao was the best SE Asian beer so I went to an Asian supermarket in the Seattle area and got some and the lady at the checkout was Lao and was so happy to see me buying Beer Lao, she even told me her kids got a job working at the high speed rail in Vientiane. After trying the beer I thought it was a really great lager for hot days, hope to visit the country some time soon.

Naem khao she made, in Thai is called Khao Todd Naem Kluk(ข้าวทอดแหนมคลุก). Main different is we also fried the rice to get them crispy as well :)

I developed a shellfish allergy later in my adult life (I’m 45) and I’m terrified to visit Asia because I feel it would be very difficult to avoid the shellfish given the prevalence of shrimp paste. Sigh. I miss Thai curry.

I freaking love Laoitian food! Nam Khao is one of my absolute favorites. I actually make papaya salad (my favorite dish) and sticky rice at home exactly the same way she showed with a steam basket and all, flipping the rice and aerating it. I haven’t gotten around to making Nam Khao cuz I’m a white woman with an air fryer and no deep fryer 😂.

Omg omg omg I'm so glad she brought Nam Khao! One of my favs. My mom is Thai and my step dad is Laotian and now that I'm older I'm craving the foods that my mom cooked growing up and I always thought they were Thai dishes but I am finding they're mostly Laotian recipes! KZbinr Saeng Douangdara posts Laotian recipes on his channel, if you're able to try some definitely do! One of my other favs is served at all the big parties like weddings baby showers etc called "Or Lam" Cooking with Nana, and House of X Tia are some other great Laotian youtubers (Nana could be my grandmas twin!❤❤)

Hello Chef Brian! Like several other folks, I am not too familiar with Lao cuisine. Thankfully, I have gotten to try Nam Khao at a couple local restaurants. It is really good! Coming from someone who also enjoys lettuce wraps with rice, pork belly, and gochujang, I would say there is no comparison between those two dishes. Both are so tasty, full of flavor in their own special ways!😋😋

Theres a rather popular Lao restaurant in London, "Lao Cafe" . I don't think theres many in the UK. Plenty Thai restaurants, theres a couple I've seen that are Thai & Lao and serve a few Lao dishes

In Thai we have called the Som Tum differenly as Tum Thai and Tum Lao. Tum Lao in Thai is mostly like in this video using these land crabs and fermented fish sauce. Tum Thai has a lot of ingredients like Pad Thai. It has palm sugar, dried shrimp and roasted peanuts. There are a lot more different kinds of Som Tum but they're on this spectrum between Tum Thai and Tum Lao. BTW substitute for the shrimp paste could be dried fish. Put a lot of salt on gutted and butterflied fish (no head, no gut, bone is fine, should be thin) and sun dry it like a beef jerky (the smell might make your neighbor call the police on you but totally worth it). After it was totally dry, you could store it unrefrigerated in a dry closed container like a jar. When you want to use it, Roast well to make sure it's safe and add more smoky flavor. Then use a mortar or blender to shred it into powder. It will be different from shrimp paste. But it's in the same direction as fishy salty umami. The smell is not as strong as shrimp paste and has smoky quality in it. One of the best ingredients that could goes everywhere from chilli paste to soup and even on fruits like watermelon. Edit 2 : The crispy rice salad thing is in Thai too. In Thai we call it Yum Nam while in this clip Laos people call it Nam Khao which is totally understandable. So no. It's not unique to Lao. But this dish is less regional than Som Tum. I see no variation in this dish beside the ball's shape but I think that's her own invention. Traditionally it should be just a round ball. Both in Thai and Lao.

Uncle Roger is Malaysian. We Indonesians often do this kind of thing with them. Like how some of us (Padangese) make fun of "Malaysian rendang" (often internationally just called "rendang") - which is slightly different. Some of our edgier folk (who typically lives in the west) often try to roast each other the way Europeans have been doing it without going to actual war for comedic purpose. They forget that we also have plenty of hillbilly and lowly educated folks back here - which often react in tribal manner.

Honestly the best outcome. It's always bad when people double down, play victim, make fake apology videos (that people just see through), make comments like "can't take a joke bro?", which is all stuff that makes things worse. Given it was a joke from Uncle Roger the character, there's no reason to be sorry, instead of getting defensive or saving face, he not only shows that it's a joke in good faith but also turned the whole thing into something positive. Because now I'm wanting to try Lao food and I love the chef he's collabed with, she has great energy and gives just as much as she takes. And his collaborations work, I have auntie Liz and auntie Thuy's books and when I have a reason to go to London, I'd love to visit their restaurants. And now I follow Ae on Instagram, because damn, that food looks good. I hope Uncle Roger does good on his word and visits her restaurant when it opens. And credit to Uncle Roger's roasting, because it has driven me to try and improve my Asian cooking. And whilst I don't think I'm a great cook, I try to avoid some of the mistakes others make, heck I own a rice cooker and he's right to rave about them, because I've only got a cheap-as-shit one from Amazon, so it's not like you have to spend a lot to get good rice every time without any effort. As a British person I now feel the need to apologise for some of our chefs, because wow, I knew we took some liberties, but some er...really take liberties.

King oyster mushrooms or whitefish can usually be substituted for shrimp in a dish but for paste… I don’t think there is a substitution unfortunately.

if you love food that happens to be spicy, there are a couple of things that can help cool that burn in your mouth if you will. besides from milk, cucumber helps you deal with spicy food. back in the day i had an Thai Aunt who served cucumbers with her spicy food and it worked perfectly.

Horseradish does great too I was at a hot sauce shop and they had a sauce called flash bang I think and I love spice habaneros are my fav and so when they offered me free sample of the sauce I was excited and for the free sample they dipped the very tippity top of a tooth pick in the sauce and had me wipe it on my tongue and i felt like my insides were melting i couldnt breath or speak and after maybe 2 minutes of agony they gave me horseradish and instantly nullified the spice...yes horseradish is spice but it works

@@packnerz2017 well that is one contradiction my man. placebo effect is scientific. regardless if its right or wrong. there is a reason why milk is more of the most common thing served along side spicy food. and that is because it works. personaly i dont think it is the best thing to cooldown that spicyness. but it does infact work

I’m Thai and Lao and my Laotian dad even said to me that the best food is in Vietnam. My mom who is from the border of Thailand near Laos and makes a lot of Lao food (particularly khao poon which is my favorite Laotian dish, although I prefer Khao poon nam jaew which is the clear non coconut milk version) but I will say a lot of Thai food originated from Laos.

Honestly about the Korean skin care. I'm from Ireland and if I spend 0.5 seconds in the sun I burn. And Korean sunscreen has been a godsend to me. Thank you Koreans for saving me from turning in to a pile of dust on the ground when it gets above 22 degrees Celsius without my skin getting all greasy and gross 🙏 I'll show you guys all the best secret Guinness spots if you come here.

As a Thai, I am not gonna lie I think I only have had less than 10% of Thai foods because I mostly stick with the central Thai foods, Thai-Chinese foods (well I am a 100% chinese who was born and raised in central Thailand), and only try some famous foods from other regions, Northern, Southern, and Isan (which means Northeastern). These 4 regions have different foods, cultures, and accents. Most of the worldwide famous Thai foods are central Thai and some Isan foods. Actually, althoght central foods are spicy for foreigner, they are considered as the least spicy in Thailand. It is arguably whether which one is the spiciest though. Most people might say the southern one I guess. Thai and Lao not only share the foods, we also share cultures and languages. I never learn Lao language but I can read and listen to Lao language except some different vocabuaries. Thai-Isan language is more similar to Lao. In term of history, some Thais might say Lao was a part of Thailand while Laos might claim Isan to be part of Lao. My prefer theory, according to a book called Siam Mapped, is that there was no concept of precise geographical boundary in the area before the West colonized some parts of it. The area in between like Isan was both Siam (Thailand) and Lao.

Thais will say that Isan food is very much alike to Lao. Some families have mixed blood of Lao and Isan. North Eastern Thailand has sour/fermented flavors. Shrimp paste(fermented), similarly Filipinos have "Alamang" both raw in refrigerated section and cooked (spicy/sweet) on shelves. One substitute that is close would be to use Thai dried shrimp or better krill boil or better, pour boiling water over the shrimp/krill. Drain add salt about 20% of volume of the shrimp, make a block, sun dry for about 2-3 days until the block of shrimp can be lifted without crumbling. Ferment in room temperature for 3 days,Then trasfer to refrigerator for more fermentation time. Good for months. Salt is the main ingredient to ferment the shrimp/krill.

Laos people is one of the funniest and sweetest people to hang around, i'm Thai btw Oh the crispy rice! I never saw that. Maybe because I'm live in the northern part so i don't really know what eastern eats other than papaya salad and soi ju (raw beef) So this is interesting

Laotian dishes aside, I agree with the laotian chef at the end of the video. It doesn't mean that the cambodian food is horrible but lots of the menus that they cook for the restaurants in the states might hard to distinguish from the thai counter part. Moreover, due the fact that some restaurant even dare to claim thai food (central thai style) as cambodian food on TV, I would say that Uncle Roger would have a hard time dealing with their ego for sure.

I think Auntie Ae needs to do a collab with Max Miller on the history of Laos and Lao cuisine. Also, America's Test Kitchen found that Bragg's liquid aminos make a decent vegetarian substitute for fish sauce. I don't know if they've figured out a vegetarian alternative to shrimp paste, though.

A faster way of cutting cherry tomatoes is just putting them on a metal skewer and then cutting vertical down the axis of the skewer. I grow cherry tomatoes and have ended up with a few hundred pounds of them before, this is how I process them. 20 cherry tomatoes fit on one of my skewers, one cut and I have 40 halves.

I looked through a ton of comments and no one seems to know who "she" is. Her name is Ae Southammavong (I think I spelt the last name right) and she did a lot of cooking on social media with Laos food. She also came in 8th place on the first season of Next Level Chef. Uncle Rodger made some comments on a previous video and I believe Ae and Nigel got together to do this video after. Even does some out takes at the end of the video

My first experiance with spicy food was chinese restaurant when i was just wee child, from soup to salad it was all i tasted... stoped eating spicy food till way later when i had green curry, could actually taste flavour with that spice. Sadly chutty's stoped selling it (now they sell nonspicy curry)

The best Lao place you can eat is at a families house. I had the privilege of working with around 16 or so guys from Laos. They would always share their lunch with us white boys. I was invited to a traditional Laos wedding and I was floored by the hospitality. The BEST wedding I've been to. The people were so damn nice and the food was incredible.

Bird's eye chili peppers, got like a huge bag in my drawer (dried ones). I've tried hotter peppers but these ones hurt different, that's totally true. The heat is so specific. I'm gonna try to fry some into my next chili oil batch next time.

He almost got cancelled before. It had something to do with his collab with mike chen in the past. He deleted that video afterward. I have a feeling he is about to retire the uncle roger character. It all started with the pandemic, and the longer he keeps this up, it will get boring. He will run out of people to criticize at some point.

What I meant of content getting boring is repetition. His jokes are getting predictable. If you don't get tired of it, that's fine. I do see how Nigel is trying to be relevant despite all of this, and its a skill, but this act is not just about him.

I want some of that crispy rice salad. I think I heard somewhere that mango sticky rice is from the Laos side of Isan, so everyone's favorite Thai dessert is actually Lao. And Jordan, don't worry about calling Scots Brits; that just means they're from the island of Great Britain. If they want to take offense, they're just ignorant of their own geography. (Well, unless they're from Orkney or something.) I just cringe when my fellow Americans call them English. (Or when they call Irish Brits; the only one of the British Isles whose inhabitants you can call Brits is Great Britain, that's a great way to start a fight, especially after they gained independence for the country/most of the island.)

Nam Khao is one my top favorite dishes of all time!! There are so many contrasting textures and flavors, everything builds together and it is one of the most flavorful and amazing thing I've ever eaten!! It's honestly a reason for me to say I live to eat and not eat to live. I could go on lol 😂 The only regret I have is not having enough time and energy to invest in making it for myself at home, and I also don't have easy access to Asian groceries where I live 😢

Agree on the shrimp paste. I can only use it when I'm home alone and have enough time to air out 😅 But it's a great umami bomb. Just have some shrimp paste and garlic, stir fry it until fragrant, add some asian greens like morning glory to stir fry it for some minutes. Done. Easy and delicious side dish is ready.

I don't need a Lao restaurant, my wife is from Laos, and I can say Lao food has its own thing going for it. While similar to Thai for obvious reasons, it is something quite special. Spicier and more flavorful in general. If you haven't tried it yet, you're missing out. In my top 10 food dishes of all time, Laotian food has at least 5 of those spots. Reminds me, I need to ask my wife to make me some of them crispy riceballs tomorrow, (not the one's in this video, different type.)
