I make butter chicken tacos. I use naan, butter chicken, chutney to replace salsa, a cucumber mint yoghurt sauce to replace sour cream, a fresh or brined cheese(Such as paneer, and I've even had success using feta at a pinch). Fresh coriander, and you can pull add ins from either Mexico, or India, such as various pickles, or veg. Anyone from India, or Mexico, that I've served them to, absolutely love them.

You're right about Ghee, Chef Leches. The butter is churned out of thick cream. This butter is then boiled, this is constantly stirred till you separate the solid(crisps) and liquid(clarified butter). At this point the mix is taken off heat and cooled, when the temperature drops to warm, the entire thing is filtered, you can even get the ghee in the crisps by boiling them in water. The ghee will separate from the water. This can be used when you don't want too much of the ghee flavour in your dish.

Tandoors in Harappan age, they were discovered, but they weren't used for cooking purposes. They were used for heating purposes. The communal baths, the brick kiln and so on... Suffice to say that more than one person can discover the fact that heated air affects stuff not just clay and metal, someone in the middle East discovered and used this for food, so we have Tandoor for cooking. BTW, Tandoor==Oven. Ovens are not just used for Cooking food. Ovens in earlier times were used for melting and smelting iron, bronze, etc. Before then they were used to bake Clay utensils and forge simple, sharp weapons. Right, sorry. I was here to talk about Mughals. The guardian Council of Elders in Iran, it's been there for over 1000 years. So about the end of 8th Century, this Council of the Elders came to know that in a far off land to the east there's a country where the temples are quite rich and since the country has never been invaded before, the security on the borders is quite Relaxed. The Mughals were like their henchmen. There were amongst the Mughals who ruled us until the end of 18th Century, these were the ones who broke off their 'Umbilical Cord', from this council of Elders.

You should check featr's precolonial adobo. That's the original adibo recipe (I believe). At least thats almost how my ilokana lola used to cook adobo (except for the pot). It's super stripped down, just vinegar and garlic, no soy sauce.

Are you kidding us europeans by telling us it is just a french vanila "pudding" with sugar on top that has been burned with a gas burner... the most easy desert in europe to make. You just lost a lot of points here dude. Even a "riz au lait" is harder to do. But no, you insist on the "hot" sugar on it... that is a lame chef talking. Well we have seen from the begining of this video that you don't really know what you are talking about (the oils, the vegetables etc)

At least on of Oliver's green thai pastes is freaking amazing. It's a fave in the house and every single time someone else is over and they try it, they want the recipe. I didn't watch the whole recipe, but it's reasonably traditional - but it;s not absurdly hot like most 'traditional' versions. And I like a bit of heat - but if it gets in the way of tasting and enjoying the food, no whining about tradition matters a bit. And guess what? The well traveled, very knowledgeable Oliver understands this.
