Joel robuchon’s recipe uses waxy ratte potatoes. It makes a huge difference in the end result of the dish

Yes, you're right. I asked someone working at his restaurant in Taipei, but he told me we cannot find the right variety of potatoes in Taiwan unfortunately. But yes, it has an importance for the best result for sure.
