Hi BigBoy, thanks for this! I am making it as a side dish for Christmas this year. I am new to your channel and noticed you are based in Melbourne. Do you know Hong Kong well? If I buy potatoes from the wet markets here, which variety is suitable for this dish? If I understand you correctly, I should get the starchy variety, not the waxy ones, right?

Thanks and welcome. Yes u r right starchy potatoes will be a good fit to this dish. Not sure if u can get Russet or Yukon Golden potatoes easily in HK, otherwise I think those brushed potatoes (with a lot of mud on surface) in wet markets can do as well.

@@BigBoyRecipe Hey, I hope you are still checking messages here. I did make it for Christmas. I followed your recipe to the T and it worked perfectly and tasted divine! Some of my guests have heard about this dish, but had never had it in restaurants or found it too much work to contemplate making themselves. Thank you again for showing me how to make it. Next time I'll try it with the tuna topping you suggested. Please continue to post more recipes!
