I've been on a kick of trying to perfect my personal Asian fusion cuisine lately. I'm largely inclined towards South Korean spices and flavor profiles, Japanese noodles, and Vietnamese Pho for broth. One thing I've been exploring lately, though, is chili crisp. After watching a bunch of videos about it, (in particular Chinese Cooking Demystified's video about Lao Gan Ma) and various people's various personal hot oil recipes I was thinking maybe something like that might be something you'd enjoy exploring since you seem to like using things you've made as part of your everyday pantry.

My dad usually makes pancakes without eggs (the batter is REALLY THIN), also there's a recepie which requires carbonated water for extra bubbles (here in Russia we enjoy our pancakes (Blini) with golden edges, bubbles and brown spots) As for my favourite filling: it's either condensed milk or sour cream with a dash of salt (it's pretty good if your sour cream doesn't have too much fat (no more then 15% as we have diffirent varieties: 10%, 15%, 20% and 30% of fat), obviously Nutella as well. You should also try out more savoury fillings: fish roe, salmon, fried minced meat (one of my favourites), pumpkin, cheese, boiled eggs, ham, spinach, broccoli, mushrooms... By the way, we have a saying "первый блин - комом", which roughly translates to "the first pancake is always botched/a mess" similar to "the first step is always the hardest"

As a finnish man, I'm happy to see these nordic style pancakes. Few tips that people might enjoy. 1. If you make a big batter (3eggs, roughly 3 cups of milk, 3 cups of flour.) add around a teaspoon of salt and a tablespoon of sugar. Helps bring out the sweetness in the pancakes making them more flavorful in itself, not just something you eat for the nutella/berryjam/cream/icecream. 2. You can use quite a lot of butter in the frying process to get extra crispyness and color. Very cool. 3. Be sure to mix your batter in between every pour on the pan, It gives the pancake a more stable structure making them easier to flip and stay together. And extra trivia, the first pancake here usually is given to a dog, but in really old times it was given to the forest spirit (you throw it into the forest), because the first one almost always fails to stay intact because your heat isnt stable yet. Super fast edit: I personally use way less flour roughly 3:2 ratio with milk to flour for thinner pancakes.

Fun Fact of the Day: Here is how a microwave works. A molecule is a group of atoms that are bonded together. Each type of bond has its own bond length. For example, a bond between a Hydrogen and an Oxygen is shorter than the bond between a Hydrogen and a carbon atom. A microwave shoots out microwaves (duh) which are have a low frequency. These waves are at the perfect frequency for the length of the bonds in a water molecule. When the waves hit the bind between the oxygen and one of the hydrogens, the bond will start to rotate. This movement releases heat.
