Boris. When you want to make a blin with ham and cheese, you throw it in the blin when the batter is still soft, so it settles into the batter so it stays beautifully together like a perfect Slavic family.

I personally would disperse the cheese evenly throughout, and then cut the ham into strips and carefully lay it in three diagonal bands, so it settles into the batter like a perfect Slavic wardrobe.

Yes and this have a reason. Slavs says 'Первый блин комом" (First pancake unsuccesful). I know west countris have same phrase. "Blin" it a short form of expression of emotion after failure.

Once upon a time, I worked in a lunch restaurant in Finland. Most Finnish lunch restaurants sell pea soup and pancakes on thursdays, and on this one thursday, a Russian trucker stopped by for lunch. He took one look at the buffet table, took a large flat plate, applied the biggest pancake he could find on it, and then filled it with the green pea soup and chopped raw onion. It was that day I learned true fear of slavic cuisine. Truly they master the use of blini like no other men. Way of the open hand, nonsense. The way of the open blini is far deadlier.

Boris. After I saw this video I made it. I loved it. And have been making it almost every week since. I have altered the recipe slightly by changing the units. Instead of 100 grams of flour. I use 100ml of flour. And my blind always turns into a "bowl" that's when I know they're ready! And it works so well with lingon yam!

Pro tip for those who are seriously considering making blini: 1. Use a well seasoned carbon steel or wrought steel pan. It can take and conserve high heat unlike an average non-stick pan, it is lighter than a cast iron pan so you can more easily flip with it, and it's nonstick unlike a stainless steel pan. 2. Add melted butter or some other aromatic oil such as roasted sesame oil into the batter instead of plain cooking oil. It adds a nice touch of extra aroma. Personal preference. 3. You shouldn't need to add any extra oil into the pan if you did 1 & 2. (Boris also didn't need to add oil since he used a nonstick pan and he already added oil to the batter) 4. Add (a lot) more milk into the batter if you want a thinner pancake. The version Boris made is too thick to properly hold filling like a tight wrap (which is a common 'fast food' in Russia). Don't be afraid of making the batter too thin, you are extremely unlikely to make it too thin. 5. Never forget to add salt. Sugar is optional since milk already contains sugar. Salt helps the gluten in the wheat to form and makes the pancake more stretchy. 6. Using extra eggs is fine if you prefer a more eggy taste.

You can get coloured fish paste for 4€. A 50g jar of real caviar will set you back 50€

caviar is fisheggs. Traditional expensive caviar is from sturgeons, which is why they're expensive. But theres cheap caviar from other fish as well, which is still real caviar.

Instead of jam, you can also put inside some cottage cheese with raisins, pork mince with onions (as in chebureks), liver pate, caviar (of course!), even sliced fruits - trust your Slav imagination!

after making several other boris recipes i finally made myself some blin. i used way too much oil, but the blin is very forgiving. thank you blin

I have just made my own blin, IT'S FREAKING DELICIOUS!!!! And also the recipy was very easy. And I tried the *blin 360* , It's harder than it looks.

Use less oil and it flips better, I usually have a tiny bowl next to my stove so I put oil in pan then out so the pan is just right

Guys if u want get one potato, cut it in half, put a fork into it and get a tiny bowl of oil. Put potato in oil and then into pan, you don't need so much oil.
